I discovered how to make a healthy cream sauce with chicken broth that just blows people away with its rich taste. Only I know the truth which is that there is no cream involved.
In a saucepan heat one can of fat free, reduced sodium chicken broth. When it boils add 1/4 cup of flour, and one half of a package of fat free cream cheese. Reduce heat and stir with a whisk for about 5 minutes until sauce is thickened.
To this fat free, very rich tasting sauce you can add cooked noodles, broccoli, sauteed mushrooms and onions, cooked chicken -- the combinations are endless, the taste is delicious, and the meal is healthy.
Of course you can also use regular broth and cream cheese, which is still better than using heavy cream.
And it is definitely NOT soup (grin).

I hate soup too!! You can use the broth to make an excellent sauce:
Sauce Velouté
Total ingredients to yield two quarts:
5 oz. butter
5 oz. all purpose flour
2 qt. Chicken stock
Step one: Make a roux
Melt butter in a heavy bottom sauce pan. Stir in flour and keep stirring with spatula until smooth. Cook gently over low heat for five minutes until barely golden. Do not brown.
Step two: Finish the sauce
Slowly whip in the stock which must be hot. When all the stock has been incorporated bring to a simmer and cook for 30 minutes. Remove from heat and pour through a fine strainer. Refrigerate until used.
Altitude Adjustment: At 8,000 feet add 30 minutes to the broth recipe, and one hour to the stock recipe. Prorate accordingly.

1) Make rice with broth instead of water.
2) Chicken broth with some oil and vinegar, onion, fresh ground pepper, and spices, make a nice marinade for chicken or other fowl.
3) Cook vegetables in chicken broth, then strain and eat.
4) Super off beat, but if you're really hot, it's refreshing...Puree a cucumber, celery, broccoli, some dill, and a just a little fresh garlic. Puree with enough chicken broth to make a slush. Freeze the slush to make a kind of sorbet, or sprinkle over a spinach or mixed green salad like a freezing cold salad dressing.

CHICKEN BROTH
1 (2-3 lb.) chicken hen
1 - 1 1/2 lbs. chicken bones & scraps
2 celery stalks, chopped
1 med. onion, sliced
2 med. tomatoes, chopped or 1 tbsp. tomato paste
4 qt. water
1 tbsp. salt
Place all ingredients except salt in a large stockpot. Cover and bring to a boil. Reduce heat to very low. Simmer, covered 1 to 1 1/2 hours, skimming surface foam occasionally with a slotted spoon. Add salt. Strain broth and use. Cool broth completely before freezing. Makes 2 to 2 1/2 quarts of broth.

You can cook noodles and when done drain,add a tablespoon of butter and then a can of chicken broth.Also you can make homemade bread stuffing with adding a can of chicken broth,chopped onion,bread,chopped celery,and chopped green bell pepper.You can also cook instant rice and add chicken broth for flavoring .

I use chicken broth in my mashed potatoes instead of water.
I boil rice in chicken broth instead of water, also. This adds great flavor without having to use alot salt or butter!
