You could start out by talking about movies and find out what is her favorite, maybe go rent a video you both can watch together. what sports she would be interested in playing if any.
Ask her about her friends who their parents are and what is her favorite subject at school. If you watch her secretly, it won't take you long to find out a lot of things about her without having to ask her.
Maybe if you could redecorate her room, let her help with the colors and let her make suggestions on what she likes.

These days, 8 year olds are way beyond talking about their favorite color. Take her out for ice cream and let her talk. You listen. It might take a while for her to open up and that is fine. Get a sprinkler and a slip and slide and let her have fun. You could also rent a few movies that she would like to see and have a girls night.

Start by letting her ask you questions, like what school subject was your favorite when you were her age, did you have a pet, who was your best friend, what you liked to do after school, etc. And then ask her to answer the same questions.
If its going well, you'll find that she might ask you about the topics that she really wants to talk about. Its a good way to get her to open up a little, and she gets to learn about you too!

offer to play a game, let her choose which one, ask her about why she likes that one
ask what her favorite subject in school is
