Piña Colada Squares

Ingredients:

1 c. flour
1 tsp. baking powder
¼ tsp. salt
¼ c. margarine or butter
1 egg, separated
¼ c. skim milk
1 (14 oz) can unsweetened crushed pineapple in its own juice2 Tbsp. corn starch
2 tsp. rum extract
1 tsp. vanilla extract (use the real thing)
¼ tsp. cream of tartar
1 Tbsp. sugar
1 c. unsweetened coconut (shredded or desiccated, or a combination of both - your choice)
Preheat oven to 350°F.

For the bottom layer:
Combine flour, baking powder and salt. Cut in margarine until mixture is crumbly. Beat egg yolk & milk together with a fork. Stir into crumbs. Press into the bottom of a lightly greased 8" square pan.

Middle layer:
Combine crushed pineapple (and its juice) and cornstarch in a pan; mix well. Stir while cooking over medium heat until mixture boils and thickens. Stir in the rum extract and vanilla extract. Pour over the bottom layer.

Top layer:
Beat the egg white and cream of tartar until frothy. Add sugar and beat until soft peaks form. Fold in the coconut. Spread evenly and carefully over the pineapple layer. Press down lightly with a fork. Bake in a 350°F oven for 30 minutes until top is golden brown. Cool and cut into squares.

(The aroma of the cooking pineapple will make you the envy of the neighbours. You may want to make two!)

Fresh cherries. Their sugar is levulose, acceptable for diabetics. They were a highly good diet for me today, though I do not have diabetes myself.

DIABETIC DEEP DISH APPLE PIE

2 tsp. liquid sweetener
1 tbsp. cornstarch
1/8 tsp. salt
1/2 tsp. grated lemon rind
1/4 tsp. cinnamon
4 med. apples, sliced
1/4 tsp. nutmeg
2 tsp. lemon juice

Combine cornstarch, liquid sweetener, salt, lemon rind, lemon juice, nutmeg, cinnamon and apple slices. Place in 9 inch deep dish pie plate. Place a pie crust on top of pie filling. Bake at 425 degrees for about 45 minutes. 1/8 slice equals 1 bread and 1/2 fat exchange.
