SPAGHETTI SAUCE FOR CANNING
1/2 bushel tomatoes
3 lb. chopped onions
4 green peppers
3 hot peppers
1 garlic bud
Cook this 1 1/2 hours. Then add: 1 c. sugar 1/2 c. salt 1 tbsp. oregano 1 tbsp. basil 4 tbsp. seasoning
Cook 45 minutes to 1 hour. Put in pint jars and seal.

3 (15 ounce) cans tomato sauce
1 small can tomato paste
1 (15 ounce) can stewed tomatoes
1 tablespoon oregano
2 tablespoons sweet basil
1 teaspoon granulated sugar
1 small onion, minced
Garlic, to taste
1 1/2 pounds meat (Italian sausage, chicken, ground round,
meatballs or a combination of any of these)
1/4 cup red wine
Brown the meat and discard the grease. If using Italian sausage, fry it for until well done.
Place all of the other ingredients in a crockpot and set to HIGH. The tomato paste will need a lot of stirring for the first 10 minutes or so. Add the meat.
After the sauce is boiling, turn the crockpot down to LOW and cook for 6 to 8 hours.

Simple Tomato Sauce:

1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
2 dried bay leaves
4 tablespoons unsalted butter, optional
In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 to 10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
Puree sauce in a blender until all large chuncks are broken down.
Jar or place in Ziploc freezer bags and freeze.
To make your own crushed tomatoes:
Boil 4 qts. of water with 1 Tbls of salt and place fresh tomatoes in the water for 1 minute. Immediately place tomatoes in ice and water bath then peel off skin. If skin doesn't come off easily try boiling additional 30 seconds and try again. You can then cut tomatoes in half and spoon out some of the seeds and place into food processor to get your four cups of crushed tomatoes.

The best spaghetti sauce is to keep really plain. You can always add stuff later.
Fry some garlic and onion and then add your chopped tomatoes and throw in some basil leaves. Let it simmer for an hour. Done.
You can bottle it and freeze if you like.

Spaghetti Sauce Recipe #79829
I do not know where this recipe came from. A friend gave it to me. This is THE BEST SAUCE I've ever had!! We use to like dining out at Italian places but not now. Not after eating this sauce. I don't think there is any sauce that will taste as good as this. My Husband eats this stuff by the spoonful. It is that good!! I am sad to see that this recipe isn't liked by all. My sister said it was too sweet as well. I guess you just have to have a sweet tooth to enjoy. I hope you try it a different way to satisfy your taste buds. If it is not Italian enough for you, then maybe try adding more Italian seasoning and leaving out the sweets and maybe trying Italian Sausage in addtion to or instead of the polish sausage. For the other person: if it is too sweet, next time, just don't add all the molasses and or brown sugar or take one of them out and add all of the other. Sorry you had to toss it. You could have frozen it and fixed it next month or 6 months from now. It freezes well!
1 (7 lb) can tomato sauce
2-3 lbs hamburger
onions
red peppers
green peppers
1/2 lb Polish sausage, chopped
3 tablespoons italian seasoning
2 tablespoons garlic (1 TBSP if using Fresh)
2 cups chopped tomatoes
1/2 cup molasses
1/2 cup brown sugar
fresh basil or dried basil (add to your liking)
6 quarts Change size or US/metric
Change to: quarts US Metric
1 hour 45 minutes 45 mins prep
Put tomato sauce in large stock pot 8quarts or larger.
Brown hamburger, drain (I like using paper towels to pat grease out as much as possible).
Add to pot.
Brown the chopped polish sausage.
add sausage to pot.
KEEP grease.
In grease from sausage, cook onion, green and red peppers until tender.
I like them browned.
Add to pot.
Start simmering Sauce in the stock pot.
Now add the remaining ingredients.
Let simmer on low heat at least an hour (or longer).
Stirring occasionally.
I usually divide this into 1 quart containers and freeze until ready to use.
I usually have 6 quarts to freeze.
I usually thaw in microwave a bit them simmer more while cooking spaghetti.

SPAGHETTI SAUCE

5-7 cloves garlic (more if you like it)
1 onion

1/4 tsp. marjoram
1/2 tsp. basil
1/4 tsp. thyme
1/4 tsp. pepper
Dash and sprinkle salt
Many mushrooms
1/2 c. grated carrots (if you like)
1-2 bell peppers
2 tbsp. Parmesan cheese, grated
72 oz. tomato sauce (many sm. cans or 2 lg. cans)
1 tsp. honey
Fresh parsley
Brown meat in skillet by tearing meat into small pieces in hot skillet, turning meat to cook all sides. Some oil will separate from meat during frying.
In large pot or skillet used to cook sauce in, pour 4 tablespoons oil from meat. Add spice, onion and minced garlic to the heated oil, then stir in the remaining spices. Stir until onions get soft and garlic is a light golden brown (do not allow garlic to get too dark or it will be burned and bitter).
Clean and chop many fresh mushrooms and add to skillet. Add carrots and chopped bell peppers, occasionally stirring as to saute evenly.
Sprinkle with Parmesan cheese. Add tomato sauce cans (cooked tomatoes) to skillet.
Stir in drained browned meat.
Cover pot and let it simmer for an hour, not boil. Make spaghetti pasta 15 minutes before serving preparing according to directions on package.
