Tater Tot Casserole

1 lb ground beef
1 small onion, chopped
1 pkg tater tots
1 can cream of mushroom soup
1 can condensed milk

brown hamburger and onion together, place evenly in 9x9 pan or similar size casserole dish

put tater tots in even layer over hamburger mixture
mix soup and milk together then pour evenly over tater tots.

Bake at 400 fr an hour or so. (less if tater tots were thawed, a bit longer if they were frozen.)

I sometmes sprinkle a cup of frozen peas over the hamburger mixture before i layer on the tater tots.

Shepherds pie is quick and easy... just brown ground hamburger with onions and garlic. Line casserole dish with the meat and then top with mashed potatoes. Top the potatoes with cheese, and bake til the cheese is melted and browned. Toss a salad with veggies and have Texas toast, or have fruit salad instead and serve with a raspberry vinagrette. This is my oldest daughters favorite meal! Oven time is only long enough to melt the cheese, so it's good for a summertime supper.
Or try quiche. Store bought pie crusts, eggs, canned milk (cream is best, but not everyone keeps cream) and any meat or cheese and voila! What my high school buddy used to call egg pie! LOL Just pre-cook a store bought pie crust for a few minutes to lightly brown. When it cools, add meat and cheese to the bottom. Mix 5 or 6 eggs with a can of evaporated milk or cream, and add salt and pepper if desired. Pour over the meat and cheese, and bake until set, about 55 or 60 minutes at 375 degrees. Let sit for 10 minutes to set fully, and serve with salad, and a nice white wine. ENJOY!

Pasta with some sort of store bought sauce is always easy. A vegetable stir fry with your favorite vegetables, some sesame oil, soy sauce and black pepper over rice is easy and healthy. If you have a crock pot, just combine some beef chuck cubes with carrots, onions, potatoes and whatever other vegetables you may like, a bay leaf, some diced tomatoes, some tomato sauce, salt, pepper and some chicken stock, turn it on before you go to work, come home and it should be done. Those are just some quick recipes that I could think of right off the top of my head. I hope this helps.

Moroccan Orange Salad
3 oranges, peeled and sliced crosswise
1/2 cantaloupe, thinly sliced
2 cups carrots, shredded
2 Tbs. olive oil
2 Tbs balsamic vinegar
Juice of 1/2 lemon
2 tsp Dijon mustard
2 Tbs chopped fresh mint

Divide oranges, cantaloupe and carrots among 6 salad plates. In a small bowl, whisk together oil, vinegar, lemon juice, mustard and mint. Drizzle over salads.

This is kinda greasy but good eating! Steak-ums, stuffing, beef gravy, and toothpicks. Cook up the steak-ums, and the stuffing (separately) then after you have de-greased the steak-um put a spoonful of stuffing on it and roll it up secure with a tooth pick. Then Pour the gravy across the top. Oh yeah not good for a low cholesterol diet. LOL

1 box of pasta (boiled & drained) retain some pasta water
3 tomatoes
1-2 cloves garlic (chopped)
olive oil

chop tomatoes and place in a caserole dish. spread garlic over tomatos and srprinkle olive oil on top. bake in oven till the tomatoes begin to bubble, and liquid is almost evaporated. Toss tomato mixture with pasta, if pasta is too dry add pasta water. serve with grated romano cheese.

brown ground beef with onions, add 2 cans of ranch style beans and a can of tomatoe sauce, crunch chili cheese fritos and spread them over a baking pan. pour the beans and meat over the fritos and cover it wioth cheese i use either fiesta blend or sharp cheddar. bake in the oven until the cheese browns. i eat it with sour cream and picante on it but my kids love it too and its quick and easy to make. if you want more recipes you can send me a message and ill send you some.
