Milk, salt or bread. You need something to absorb the oils in the hot sauce which is what causes the burn. Stay away from water, that just makes it worse!

I just saw something on the Food channel. They were at a "Hot Sauce" convention, or something like that. People said the best hot killer was ice cream. The heavy dairy, the sugar and the coldness provided almost instant relief.

Drink a sweet white wine, like a Riesling or gwertzeminer. Even Chardonnay would be good with spice

If you over did the it in a recipe make the recipe again and mix the two together. I Put too much chili powder in chili one time and had to make a second batch and mix them together, If its to hot for you to eat, drink beer or just don't eat it.

Milk or other products with caseine. That's why so much spicy cooking has cheese or sour cream served with it.

Never drink water, that just makes it worse, yogurt, the Bactria in it will cool it down instantly, better then milk.

cream or any fatty dairy products are good, you can add them to the actual hot food to make it milder.
to mend the burn afterwards: bread or fresh tomato with mozzarella or cream cheese and/or olive oil
