they age them differently and it affects the taste making the medium, and especially the sharp stronger tasting... they even have extra sharp!!!!

TIme. All cheese starts out as mild cheese. It is allowed to age under very careful conditions, so it doesn't go mouldy, and after about 90 days, it becomes medium cheddar. Further aging (another 90 days) and it becomes sharp cheddar. The secret is to keep the air out of the cheese, which is why they are usually wrapped in cheese cloth and coated with wax during the aging process.
That's also why the sharp cheddar costs more than medium, and medium more than mild, because they have to be stored, turned, and watched over for the extra time it takes to age them.
But it's sure worth it when you get a good nippy cheddar and a slice of apple together!

It is in the age and amount of cheddaring done to the cheese in its formation. Cheddar is made by taking the cheese and cutting it on a wooden plank, and then curing it again. This gives it is distinctive flavor. The more you cheddar it, the longer you need it to set, thus the older age of the cheese. Cheddars vary in flavor depending on the length of aging and their origin. As cheddar slowly ages, it loses moisture and its texture becomes drier and more crumbly. Sharpness becomes noticeable at 12 months (old cheddar) and 18 months (extra old cheddar). The optimal aging period is 5-6 years; however, for most uses three-year-old cheese is fine and five-year-old cheddar can be saved for special occasions.

mild cheddar doesnt have much flavor at all, its pretty umm 'mild.' medium is like colby, its decent, not too strong. sharp is the strongest. it over powers a lot of stuff so dont use sharp with another strong tasting item

the stengthness in taste differs. It's like sauce- mild is not so spicy, medium is, and hot is like really caliente. Hope this helps. But its still cheddar, just depends on the strength in taste.

Sharp has a much stronger flavor. It is aged longer. They use good molds and bacterias to produce flavors in cheeses. By letting the cheese age longer a much stronger flavor develops.
