The pause is called "Shutter Delay" and is caused by 2 things:
. Auto Focus time - the time it takes the camera to find the subject, decide how far away it is, and focus on it.
. Auto Exposure time - the time it takes to determine the correct aperature (the size of the lens opening) and the Shutter Speed (the length of time the shutter should be open) to get a good looking pic.
Newer cameras have lower Shutter Delay because the manufacturers have recognized this is a problem, and have been working to improve it.
You should also consider "Cycle Time", the amount of time between pictures. This includes the capture and recording of your pic.
Look at the professional reviews in the area usually labeled Performance. They show test times for different situations.
There is a difference between cameras (d-SLR's have undetectable Shutter Delay). And there is a difference in situations (low light slows down Auto Focus). Recharging the flash slows down Cycle Time.
A good camera store can be a great source of info if you tell them that Shutter Delay and Cycle Time are important to you. Also study the test timings in pro reviews.
Some cameras can use a faster memory card to improve Cycle Time.
You also can improve your satisfaction with performance by using the following technique. Push the Shutter Button 1/2 way down and wait for it to set Focus and Exposure. Then push the Shutter Button down the rest of the way, and the pic will be immediate.

It has to do with the virtual memory in the camera. Smaller and cheaper cameras don't have it, so they take the time to write to the card. Better cameras hold it in virtual memory, so you can take another picture while it's writing it to the memory card.
