Busy Day Cobbler
1/3 cup butter
1 cup flour
1/3 cup sugar
2 tsp. baking powder
1/4 tsp. salt
2/3 cup milk
one large can sliced peaches with liquid
1/4 cup additional sugar
1 Tbsp cinnamon
Melt butter in 8 by 11 inch baking dish. In bowl combine flour, 1/3 cup sugar, baking powder, salt and milk. Pour over butter but do not stir. Over this pour sliced peaches (liquid included, but not all of it - I usually leave about 1 inch of liquid in the can, if you pour in all the liquid, it's too much)
Sprinkle peaches with additional sugar and cinnamon. Bake at 350 degrees for 45 minutes. Good served warm with ice cream.

Coffee House Coffee Cake
A delicious coffee cake from the famed espresso chain.
Topping
1 cup all-purpose flour
1 cup packed light brown sugar
1/2 cup butter, softened
1 teaspoon cinnamon
1/2 cup chopped pecans
Cake
1 cup butter, softened
3/4 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup milk
12 servings
1. Preheat oven to 325°.
2. Make topping by combining 1 cup flour with brown sugar, 1/2 cup softened butter and 1 teaspoon cinnamon in a bowl.
3. Mixture should have the consistency of moist sand.
4. Add 1/2 cup chopped pecans.
5. In a large bowl, cream together 1 cup butter, 3/4 cup light brown sugar and 1/2 cup granulated sugar with an electric mixer until smooth and fluffy.
6. Add eggs and vanilla and mix well.
7. In a separate bowl combine flour, baking powder and salt.
8. Add this dry mixture to the moist ingredients a little at a time.
9. Add milk and mix well.
10. Pour the batter into a 9 x 13 baking pan that has been buttered and dusted with a light coating of flour.
11. Sprinkle the crumb topping over the batter.
12. Be sure the topping completely covers the batter.
13. Bake 50 minutes or until the edges just begin to brown. Cool.

Already made angelfood cake.....2 boxes of lemon pudding and 1 large container of Cool whip.....tear the cake up in small pieces in a 9 x 11 cake pan. Prepare the pudding and power over the cake. Chill until the pudding has set up and then top with Cool whip. DELICIOUS AND EASY! You can use any flavor of pudding you like.....I've used lemon, chocolate, pistachio...all great. Everyone loves this dessert. It takes about 10 -15 minutes.....As MARTHA says, "IT'S A GOOD THING" although Martha wouldn't make it because it's not made from scratch. But, I'm telling you ......I'm for fast and easy and your guest will rave over this dessert! This recipe will serve at least 8 or more.

You can substitute any flavor instant pudding with this recipe........Chocolate is good too!!!
PISTACHIO DREAM CAKE (4 Layers)
1 1/2 cups flour
1 stick margarine, melted
1/2 cup walnuts, finely chopped
1 (8 oz.) cream cheese, softened
1 cup confectioners sugar
1 (8 oz.) Cool Whip, thawed
2 (4-oz.) packages Instant Pistachio Pudding
3 cups milk
In a small bowl; combine flour, margarine and walnuts. Spread evenly into a greased 9x13 baking pan. Bake at 350 degrees for 15 minutes and set aside to cool.
In a medium bowl; combine cream cheese, confectioners sugar and 5 Tablespoons of Cool Whip. Pour this mixture over the cooled crust layer and let set for 15 minutes.
In a large bowl, combine pistachio pudding and milk; stirring until thickened. Pour pudding mixture over cream cheese layer and chill for 15 minutes. Top off the final layer with the remaining container of Cool Whip. Refrigerate. Serve.

Blueberry upside down cake...I throw this in the oven while we're eating dinner...serve with ice cream or whipped cream....fab!
You also don't have to use a springform pan...a square or round teflon coated baking pan will work just fine.
INGREDIENTS:
2 cups fresh blueberries
1/2 cup white sugar
2 tablespoons all-purpose flour
2 tablespoons grated lemon zest
1/2 cup butter, softened
1 cup white sugar
3 eggs
1 tablespoon grated lemon zest
3/4 cup milk
2 cups all-purpose flour
4 teaspoons baking powder

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch springform pan. In a medium bowl, combine blueberries, 1/2 cup sugar, 2 tablespoons flour and 2 tablespoons grated lemon zest. Toss to coat berries, then pour into the prepared pan.
In a large bowl, cream together the butter and 1 cup sugar until light and fluffy. Beat in the eggs one at a time, then stir in the 1 tablespoon grated lemon zest. Stir together 2 cups flour and the baking powder. Beat into butter mixture alternately with the milk, mixing just until incorporated. Pour batter over the berries in the pan.
Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of the cake comes out clean. Place serving plate over the top of the pan and carefully invert cake and plate together, so that the berries end up on top. Carefully unlock the buckle on the side of the pan and remove. Serve warm

Here's one I like that's really easy!
Almond Mocha Pie
1 tsp. instant coffee
2 T. boiling water
3 Hershey Bars with Almonds
1 8 oz. cool whip
1 9-inch pie crust, baked or 1 purchased Oreo crust
In small bowl, dissolve coffee in boiling water; set aside. In saucepan, melt the candy bars, cool slightly. Fold in half of the cool whip. Fold in coffee and remaining cool whip. Pour into shell. Freeze. Remove from freezer 15 minutes before serving!

I love to cook and try out new and "fancy" stuff, but if you're looking for good AND easy -- go to the store and pick up a Jello No Bake Cheesecake. It's everything you need in one box. The dang thing is surprisingly great! Sadly, my husband would rather one of those than a dessert I spend hours slaving over. :)

Hershey's Chocolate Pie:
6 Hershey bars, 16oz. Cool Whip, 9 inch chocolate pie shell.
Microwave six candy bars for one minute, stir till melted. Add 8oz. Cool Whip and mix. Pour in pie shell. Top with remaining Cool Whip. Refrigerate overnight or put in freezer till frozen if running short on time. If you need more pie than this, just double it and pour it in 2 pie pans, soooo easy to make.

MONKEY BREAD
3 packages of buttermilk biscuit tubes
1 cup sugar (divided)
2 tsp cinnamon
1 cup butter
1/2 cup brown sugar
Take 3 packages of buttermilk biscuit tubes (10 per roll) and cut each roll into 4 pieces. Drop roll pieces into 1 cup sugar and 2 tsp. cinnamon. drop sugar coated pieces into a well buttered bundt pan (don't squish roll pieces when placing them in the bundt pan).
Put 1/2 cup of the left over sugar/cinnamon mix and 1/2 cup packed brown sugar and 1 cup of butter (2 sticks) into small sauce pan.
Bring this mixture just to a boil, take off heat right away. Carefully drizzle over the roll pieces.
Bake at 350 degrees for 30 min.
Cool slightly in an upright position, then tip pan over onto a plate to remove monkey pull-apart bread.

Lemon Fluff Dessert
1 large box of lemon Jello
2 cups of boiling water
1 1/2 cans evaporated milk (12 fl oz each)
4 Tbls lemon juice
1 cup sugar
1 tsp vanilla extract
graham cracker crust
Chill evaporated milk until very cold (refrigerator overnight or freezer for 30-45 mins).
Add 2 cups boiling water to Jello. Chill and set until the consistency of syrup.
Whip the chilled canned milk in mixing bowl at high speed until thick as whipped cream. Add sugar and vanilla to whipped milk.
Add lemon juice to the Jello and pour it slowly into the whipped milk, beating constantly at high speed.
When the Jello mixture is well blended with the milk, pour over one layer of graham cracker crumbs in a large square pan (cake pan).
Use 2 pkgs of graham crackers, 2 Tbls butter and 1/4 cup sugar to form the crumb crust.
Add a top layer of crust and chill for 4-6 hours or until firm.
Cut in squares and serve.
Variations: use Orange Jello and add canned mandarin oranges to the Jello and whipped milk mixture before pouring over the crust. Add banana slices and sliced strawberries to Strawberry Jello.
Use vanilla wafers instead of graham crackers. Use ginger snap cookies instead of graham crackers.
Experiment and have fun with this refreshing dessert.
