I squeeze the juices out but they still don't come out right. I've heard of soaking the shredings in water, but for how long? Also heard of boiling the potatoes first then shredding, but I would think that the potatoes would be too soft to handle. Please share your potato "magic!"

not boil. blanch.
shredded potatos into boiling salted water.
not long enough to cook only long enough to release some of the starch.
place into ice water w/bit of lemon juice immediately after boiling water.
strain, place on tray with toweling. season w/salt and pepper. allow to dry completely.
cook.
you can freeze them for use later but you have to place them in the freezer spread thinly over a tray until frozen.

Don't cook them in too much oil or the potatoes will be greasy and soggy, but not so little oil that they burn; don't crowd the pan or the hashbrowns will steam and not get crisp. Only flip the potatoes once - twice only if ABSOLUTELY necessary.

i just shred the potato, throw it a frying pan with some oil and cook until they turn brown and crispy. ive never had probs with soggy hashbrowns

This is very easy. i do it daily.

Half boil the potatoes with skin, peel and grate with a thick grater and add seasoning etc. (Never let potatoes linger in water.)

Cook on a non stick pan, turning only once

you have too cook them longer and only flip once. First get the pan hot--preheat it on burner then add oil, let oil get hot, put in hashbrowns and let them cook all the way brown on one sidde--do not flip--then when crispy brown on that side flip and let cook on other side---that is the trick--one flip and pre heatiing.

Put in a colander with heavy weight on top over a bowl in fridge over night.

Use cooking spray, instead of oil. I would not soak them first, that will make them soggier. You might try baking them in the oven. That's one way to make them as crunchy as you want them to be.

YOU HAVE TO GET A THERMONITER AND MAKING SURE THE OIL IS 375 DEGREES BEFORE PUTTING THE HASH BROWN INTO THE OIL.
