All Philistines are Canaanites, but not all Canaanites are Philistines. Here's how it worked: the Philistines were seafarers who settled at present-day Gaza shortly before the Exodus from Egypt. That's why they're not in the Canaanite purge from the Old Testament book of Joshua. I'm not sure how that compares to the fictional orcs and uruk-hai (?) of Middle-Earth, though.

My understanding of the bible: the Phillistines are Cannanites. Check the 10th or 11th chapter of Genesis.
