A shell steak is is the cut adjacent to the fillet Mignon. It is often called a NY strip steak and served w/o the bone. When they call it a shell steak on a menu it is usually served on the bone. Usually buy steaks from a butcher, but a grocery store sells steaks as well. If you have ever eaten a Porterhouse or t-bone steak, the small cut of beef is the fillet minion the large cut is the shell steak.
