Ahh ok. So would a fresh alive fish that was in a tank waiting to be bought as an eating fish be a pez or a pescado?

Or I guess you could have a natural free swimming Pez that is swimming towards a fishing hook owned by someone with the intension of catching, cooking and eating a fish. I guess it becomes a pescado from the moment the hook is in it's mouth.

I'll shut up now...

Pez is the animal, pescado is the meat but people usually refer in Spanish as pescado more often than pez or pezes

Pez is a fish thats living in water say like a pet "pez de colores" Goldfish, Pez Espada Swordfish.
Pescado is the name of the dead creature.
Like Pig when dead its meat is Pork I guess.
I uses to live in Spain and it was a common question young kids would ask in the school. Like I when I was a kid would get confused over Pig and Pork or Cow and Beef.

Pez is a free fish, pescado means it has been caught.

Pez is a free-fish that has not been caught, and presumably is still swimming free in the water.

'Pescado' literally means 'caught.' It is a fish that has been caught.

"Pez" is the fish that is alive and still swimming around freely. "Pescado" is the fish which has--literally--been fished, or caught. "Pescado" also refers to the meat.
