If you google newfoundland rescue then it should bring up the breed rescue - most pedigree dogs have their own rescue.

Contact the Newfoundland Club of Ireland, you can call the Irish Kennel Club for their tel number or look it up in their website (they have a list of clubs and cotact numbers). Place ads in the papers and the local vets, offering a reward and keep trying to find your dog!

Check and see if there is a Newf Breed Club of Ireland. Usually the rescue groups are run and funded through the national club.

Or check a kennel club and see if there are Newf breeders that might be able to refer you to the rescue contact person.
