Yes I know it's boiled egg and mayonnaise but what other ingredients do people use. A colleague of mine makes delicious egg mayo sandwiches but she won't give me the recipe. A friend of mine adds cayenne pepper to hers.

I love egg mayo,i normally mix the chopped egg with salad cream,chopped tomatoes,cucumber,spring onions,lettuce and salt and pepper.

Depending on size I would use 3-4 eggs. I like my sandwiches to be full. Even if that is too much egg salad for 4 sandwiches you can refrigerate the remainder for a day or so. Also, boil them for about 10 minutes or so. If you aren't sure if that will be enough time you can boil them longer, it won't hurt them. To dice the eggs up into little pieces I have either used a potato masher, or grated them on a box grater. Either way works exceptionally well. Here's my recipe: Egg salad. 3-4 boiled eggs, cooled, shelled and diced up 1/2 tsp. wet mustard 1/4 cup diced onion 1/4 cup diced celery salt/pepper to taste 1/3 - 1/2 cup mayo or miracle whip Mix all the above ingredients in a bowl and chill. I will start with a minimum amount of mayo, and mix in more if I think it needs it. I don't like it really runny, but really stiff isn't great either. I have also mixed in sweet red and sweet green pepper, just because it was on hand, and once I even put green hotdog relish in it, about a tablespoon or so, and that went over well. Just remember if you use that that it will make your salad runny so adjust the mayo accordingly. Hope this helps you.

Egg Salad Pizza Cones




(Makes 6 servings)


• 1/4 cup bottled reduced-fat creamy Italian salad dressing
• 1/2 teaspoon Italian seasoning, crushed
• 6 hard-cooked eggs, chopped
• 1/4 cup sliced green onions with tops
• 1/4 cup minced pepperoni
• 6 plain ice cream cones
• Chopped mushrooms, green peppers, black olives as desired
• 3/4 cup pizza sauce
• 2 tablespoons grated Parmesan cheese

In medium bowl, stir together dressing and seasoning. Stir in eggs, onions and pepperoni. Cover and refrigerate until ready to serve.

To serve, scoop about 1/3 cup of the mixture into each cone. Top with about 2 tablespoons pizza sauce and mushrooms, peppers and olives as desired. Sprinkle each with about 1 teaspoon cheese.

i usually get a little experimental with mine i use 1/2 mayo 1/2 ranch dressing, mustard of your choice, black pepper, a little cayenne pepper and any spices i have in my cuboard that may sound good..usually not salt im not big on salt or anything real salty. Onions if you have them and some times a little horshire sause depends on if im in the mood for the more spicey sandwich.

Ingredients

Good quality mayonnaise
Lemon juice (freshly sequeezed)
white pepper (freshly grounded)
salt
boiled eggs
green apples (peel the skin and chop finely)

1) Mix the mayo with fresh lemon juice, white pepper and salt in a bowl
2) Crushed the eggs with a spoon into the mayo dressing then add apples in to the mixture.
3) Spread the mixture on the bread and sandwich it with lettuce / cucumber (if desired)

it is the quantity of onion to egg - need to add just a bit more onion that you expect to - i add a pinch of salt and pepper and some very finely diced scallions -

paprika/salt/pepper for starters..
I like onion/cress/radish for a bit of texture and a few extra vitamins!

boild egg, mayonaise, pickle relish, salt, pepper
mix and spread on bread.
