OK..step 1. add vinegar to water along with a pinch of salt 2. set eggs into deep freeze for 5 minutes 3.remove eggs from freezer and plung into boiling water 4. the cold egg will cook fast and the yolk will be bright yellow and not a sickly off yellow.4.put eggs back into freezer for 3 minutes... sometimes the eggs will almost peel themselves !! THE VINEGAR IS the secret ..in china they soak for 2 days in vinegar and the shell dissolves...leaving the yolk sac...on religious holidays holy men swallow the eggs whole to the crowds amazement....and thats the rest of the story...

Hi I hope that this helps.

Half fill a saucepan with cold water.
Now with a sharp pin pierce the shell at the top of the egg. the fat end.
Put eggs on to boil, cook for 8 mins after the water reaches boiling point.

Drain eggs and refill pan with cold water allow to stand till eggs are cold. Drain eggs and give the pan a shake to crack the shells all over. Remove shells starting in the middle.

A watch word on hardboiled eggs, if the yolks have a dark outter to them you have cooked them for too long.

How to tell if an egg is cooked or not !! a cooked egg will spin like a top and a raw egg wont.

As eggs get older sitting in their carton, they lose some moisture.
This means that there will be more room between the egg white and the shell when they are boiled.
If I am boiling eggs for easy peeling, I always used my oldest eggs. The shell slips right off.
The fresher the egg, the harder it is to get the shell off.

I found that if you had a tablespoon of vinegar it help. But the major factor is the eggs are not fresh when they are hard to peel. Another thing, if you put them in icy water after don't wait too long then again they will be hard to peel.

what works for me sometimes is to take them from the boiling water and drop them into cold water and let them sit for about 10 minutes, them peel them. most of the time it works

Make sure you put them in cold running water as soon as they are done boiling. That helps with the shell.

after you boil them, run them in cold water and peel. or if you are really patient, let them cool before you peel them.
