SERRANO PEPPER INSTEAD , IT'S NOT TOO HOT . CHOPPED BANANA PEPPER LOTS OF GARLIC , TRY USING STEWED TOMATOES . DO NOT USE CUMIN , EVER . USE LOTS OF FRESH LIME JUICE . ONLY A LITTLE CILANTRO AND USE WHITE ONIONS AND A HALF OF A SHALLOT .

The salsa "big three" are tomatoes, onions, cilantro. For pepper flavor, add bell peppers. You can add jalapenos, but try roasting them first before adding to salsa.

You can also add fruit such as peaches, pears, apples, or raspberries. Tropical fruits like mangos, papaya, guava, and pineapple can also be good.

Instead of vinegar, you can try lemon or lime juice. Other spices include garlic, basil and oregano. You can add hot stuff too, but you have specifically mentioned a mild salsa.

Even with a sweet salsa, you still want mostly tomatoes - make sure that you don't use too much of the other ingredients or it won't be salsa.

We Mexicans love our salsas HOT!!! But when we have guests we like to make "Pico". It's different from "Pico de Gallo" because we add peppers to the latter. Anyway, for the plain "Pico" we chop and mix tomatos, onions, cilantro, and avocados... It's very good and it's always the first one to go!!! It's a hit with the kids as well, considering they DO like onions and other veggies. Enjoy!!!

not sure if you want a complete recipe or not, but instead of hot peppers use an assortment of colorful bell peppers,tomatoes,onions,cilantro,salt, scallions and a spice called kummin,its spelled with a c but wont let me do it

tomatoes green pepper sweet onions green distilled vinger salt dehydrated onions garlic and a little tomato juice

tomato, onion, bell pepper, jalapeno (don't add the seeds, thats what makes it hot), cilantro and maybe a tomato sauce
