I'd second the vote for Shore Acres - my family and I were just camping down there last week, at Bullards Beach. We toured the botanical gardens at Shore Acres - it was once a private estate, but is now state property - and it's just magnificent. Pretty close to Coos Bay, and you're right by the Cape Arago Lighthouse, which is cool.
Another location near there that's cool is Sunset Bay. There's a state park there as well, and the bay is just beautiful. According to local historians, pirates actually used the bay to hide in, and it's the warmest bay on the Oregon coast (because of how shallow it is). The state park is beautiful, though not quite as well-suited for a wedding as Shore Acres.

There is a beach on the southern oregon coast down by Coos Bay, that is called Shore Acres.
It has a botanical garden and a japanese garden, and it is set up for weddings, with a Gazebo, a hall for receptions, and its beautiful year round! There are a variety of areas you could choose to have the ceremony ... there is the beach itself, cliffs overlooking the beach, or either garden.

Cannon Beach or Newport. If you want sunnier, I would go further south. I love the Oregon Coast. My grandmother lives in Lincoln City and we will be down visiting her next weekend.

If I was to choose, I would pick either Seaside or Cannon Beach. Easy access, flat beaches, and nearby motels for the honeymoon.
