I am from BUFFALO, NY! First you need some Frank's hot sauce,
but heck that's for hot. Oh heck, here are some links, including Anchor Bar where Buffalo Chicken Wings were "invented." Dude, get the best blue cheese dressing you can, because you got to dip your wings in it, yes, even with the sauce on them...yum yum. I swear to you that I have never had good chicken wings outside of Western New York. Every place else the stuff they call Buffalo Chicken Wings, well, isn't. But best to you, best of luck, and remember, we may not have won a Stanley cup or a Super Bowl, , we may have snow (well a few months or so a year), they may take away our NBA team, our manufacturing, and even our donut recipe (stolen by Krispy Kremes from Freddies Donuts on Main Sytreet long ago, and that's true), but trhey can't take away our wings!!!!!!!!!!!!!!!!!!!!

Hooter's Buffalo Chicken Wings
vegetable oil -- for frying
1/4 cup butter
1/4 cup Crystal Louisiana Hot Sauce
dash ground pepper
dash garlic powder
1/2 cup all-purpose flour
1/4 tsp paprika
1/4 tsp cayenne pepper
1/4 tsp salt
10 chicken wing pieces
ON THE SIDE: bleu cheese dressing and celery sticks
Heat oil in a deep fryer to 375. You want just enough oil to cover the
wings entirely -- an inch or so deep at least.
Combine the butter, hot sauce, ground pepper, and garlic powder in a
small saucepan over low heat. Heat until the butter is melted and
the ingredients are well-blended.
Combine the flour, paprika, cayenne powder, and salt in a small bowl.
If the wings are frozen, be sure to defrost and dry them. Put the wings
in a large bowl and sprinkle the flour mixture over them, coating each
wing evenly. Put the wings in the refrigerator 60-90 minutes.
This will help the breading to stick to the wings when fried.
Put all the wings in the hot oil and fry 10 to 15 minutes or until
some parts of the wings begin to turn dark brown. Remove from the oil
to a paper towel to drain. Don't let them sit too long, because you
want to serve them hot. Quickly put the wings in a large bowl. Add the hot
sauce and stir, coating all of the wings evenly.
Serve with bleu cheese dressing and celery sticks on the side.

make it yourself...its way easy...get a large bottle of your favorite hot sauce...not tobasco...hot sauce its milder...[franks or texas pete, even red hot in a pinch. 2 parts hot sauce 1 part butter
heat the sauce in a sauce pan add a garlic clove and a nice japelino pepper[diced] as soon as it starts to simmer add the butter cut heat back ank let it simmer for 5 more minutes.
set aside...
get some peanut oil good and hot[375-380] drop your wings in at room temp sos not to lose your heat...fry till crisp[9-15 mins]
according to your frying apparatus...you want the skin crisp
drop them in a bowl of your sauce after draining and eat them as soon as they are cool enough...
cool ranch or a good blue cheese dressing...got to dip...a few celery sticks on the side..there you have it...royalty never had it so good...hope this helps...
p.s. personaly i like to have a few frosty ones on ice for an occasion like that but ice tea with lemon is just as good!!!

There are MANY variations from the original recipe (cayenne pepper, vinegar, garlic, salt and prpper over deep fried wings).
Here is my favorite. Deep fried wings (duh!) and coated w/ a sauce of equal parts Sorrachi, soy sauce and ketchup...garlic and onion powder are optional.... Hint, for more of a kick, coat them once when they first come out fo the fryer....let them cool ..then coat them again ...YUMMY!
