The different between coconut water & coconut milk is coconut water? The water is the clear liquip that being contain within the coconut flesh. Coconut milk come from the inner flesh which can be translucent to creamy white color after you break coconut from the shell. The water is a clear liquid with some pleasant aroma and can be drink directly without boiling it. whereas, the coconut milk can only being obtained by extracting the so call fat content of the matured coconut flesh which a fruit with a greyish brown color with a dry look skin. The color of coconut milk is almost the same as cow milk(that's why we call it coconut milk) which is creamy white. The stuff you get from the tin is thick is because it's a concerntrated coconut milk which most of the water content being remove before been canned & the fatty acid will harden when store under low temperature just like butter, when you keep it in cold place, it's very solid hard, under hot condition, it could very soft or melted into liquip form. Cooking using coconut is actually not so healthy for our consumption if taken to frequent as coconut milk contain a lot of saturate fatty acid such as lauric & myritic acid with can affect your blood vessel & lead to heart related problem. The best oil to be use for cooking is still olive oil. Therefore, coconut milk is healthy to be use in cooking it's not true

Coconut water is the liquid endosperm inside young tender coconuts.
Coconut milk is a sweet, milky white cooking base derived from the meat of a mature coconut. The colour and rich taste of the milk can be attributed to the high coconut oil content and coconut sugars.

Two grades of coconut milk exist: thick and thin. Thick coconut milk is prepared by directly squeezing grated coconut meat through cheesecloth. The squeezed coconut meat is then soaked in warm water and squeezed a second or third time for thin coconut milk. Thick milk is used mainly to make desserts and rich, dry sauces. Thin milk is used for soups and general cooking.
