saute shrimp in olive oil, turn heat to LOW, add butter. when melted add wine. reduce by 1/4. add broth. garnish with lemon juice and parsley. good over linguini

Introduction
I love seafood and scampi is one of my favorites. This dish is very fast and easy to prepare but still impressive.
Ingredients
12 Jumbo shrimp or rock lobster tails
1 cup sliced mushrooms
1/4 cup olive oil
1/3 cup butter
1 tablespoon minced garlic
1/4 cup white wine
2 tablespoons strained fresh lemon juice
3 tablespoons minced parsley
Directions
Step: 1 Heat oil and 1/4 cup of the butter in a skillet, over a moderate flame.
Add shrimp and mushrooms and sauté quickly for 30 seconds.
Add garlic, wine, lemon juice and mix well. Stir in remaining butter
Remove to a heated platter or serving dish
Top with minced parsley
Serve hot, accompanied by hot cooked pasta

Easy, I have 2 recipes I use, this is my families favorite. First one,clean one lb. of fresh shrimp and leave tails on, while doing this turn oven on broil and melt 1 stick of oleo or butter, splash with x-virgin olive oil, squeeze 2 lemons, chop several cloves of garlic and add your shrimp. Sprinkle some Italian bread crumbs on top, broil for about 10 min. or less, add parsley, squeeze another lemon on top. And now your done!!!

Shrimp Scampi
cook: 30 min(s)
Ingredients
1 1/2 lb(s) Medium fresh shrimp, shelled
2 Tbsp Olive oil
1 Medium onion
1/2 cup(s) White wine
3 clove(s) Garlic, crushed
3 Tbsp Parsley, finely chopped
1/3 tsp Crushed red pepper
4 oz Butter
10 oz Angel Hair Pasta
Salt and Pepper to taste
Procedures
Heat oil in a saute pan, add onion and saute 2 minutes.
Add garlic, saute 1 minute.
Add shrimp, cook 1-2 minutes.
Add butter, wine, red pepper, salt and pepper.
Cook pasta in rapidly boiling salted water and drain.
Place on plate, serve shrimp over it.

ROCK SHRIMP CREOLE
Ingredients:
2 pounds rock shrimp, peeled and deveined
¼ cup butter
½ cup green bell pepper, diced to one-half inch
½ cup onion, diced to one-quarter inch
¼ cup celery, chopped fine
1 clove of garlic, minced
2 tbsp. flour, all purpose
1 can 14.5-ounce whole peeled tomatoes, roughly cut
1 tsp. sugar
1 tsp. salt
¼ tsp. cayenne pepper
¼ tsp. black pepper
3-4 cups cooked rice
Preparation:
1. Rinse shrimp briefly and remove any large veins that are visible.
2. In a small sauce pan, melt 2 tbsp. of butter over medium heat.
3. Mix in flour and stir until dissolved and mixture begins to thicken, then reduce heat.
4. Add tomatoes and their juice to the butter and flour mixture, stir well, and heat through. The mixture will thicken. Hold warm.
5. In a large skillet, melt two tbsp. of butter, and over medium-high heat, cook bell pepper, onion, celery, and garlic until soft, but with a little bit of a crunch.
6. Add shrimp and cook until no longer transparent (three minutes).
7. Add tomato mixture, bring to a boil, cover and let simmer for five minutes.
8. Serve over hot rice (white or wild mixture).
Chef's Tip:
If rock shrimp are only available cooked, then add the shrimp and the tomato mixture at the same time.
Add a Cajun-style sausage when cooking the vegetables for an extra Cajun flair.
Cajun- or Louisiana-style seasoning can be used instead of, or along with, salt, cayenne pepper and black pepper.
Serve with French or sourdough bread.

Boil some linguini. Saute some peeled, deveined shrimp with lots of butter, garlic and wine and capers. Poor shrimp mixture over linguini and top with parmasian cheese. Yum.

Can't get any simpler the this:
If you want to serve it over pasta, just be sure to cook the pasta al dente before cooking the shrimp..
If you don't have vermouth, substitute dry white wine. And remember, NO CHEESE.
