except for fine dining and chef prepared entree's most garlic butter sauce is actually margarine. For a sauce that will keep in the refrigerator nearly forever, add garlic juice (in spice aisle) or powdered garlick to squeeze margarine or butter/oil blend that comes in a squeeze container. Mix thoroughly. Keep refrigerated. This can be drizzzled over the entree right before serving and will still have a nice appearance when it reaches the table.

GARLIC BUTTER
Ingredients
1/2 cup minced garlic cloves
2 TB minced shallots
1/4 cup chopped parsley
1/2 pound butter
1/2 pound margarine
3/4 tsp black pepper
1/8 tsp ground Mace
1/4 tsp Tobasco sauce
(I use 1/2 butter and 1/2 margarine because it can be heated to a higher temperature before it starts to smoke)
Mix on low speed - you don't want to make whipped butter - just mix it thoroughly.

It really is as simple as that. Add some parsley and pepper (and maybe a little lemon if using on chicken or veggies). You can change it up and add different herbs for a different twist. Try it with Rosemary for pork or Thyme for chicken. You can do anything, just try it. Good luck!
