I have always had good results with Granny Smith apples. They have a good flavor and don't require much sweetener.

I find any red apple is best in apple sauce. They cook faster and have more flavor and give the apple sauce a nice tinge.

i come from the cold apple hills and i believe mac's are the best they break down quickly are not to grainy are naturally sweet so it does not take as much sugar to sweeten them and i like mine a little chunky so you have to keep an eye on them or puff they are done
