Just about any meat will go with casserole. I like grilled hamburgers, or juicy meatloaf. Meatloaf works well because if you have the oven on anyway, you may as well put it to good use. Rolls, mashed potatoes, great.
My favorite Meatloaf Recipe.
1 1/2 lbs. ground beef
Salt and Mrs.Dash to taste
6-saltine crackers, or 1 slice of bread
1 egg
1Tbsp Ketchup Want it Spicier? Substitute with A-1
1/2 cup Very finely chopped onion
about 3" of a celery stalk. Chopped very fine.
Mix all this together, just enough to incorporate the ingredients. The more you mix the tougher and less juicy it becomes. Shape like a loaf of bread, put in a bread pan. Cover with foil. Bake at 350 for 45 minutes. Everyone loves it!
Have you ever tried fried green beans? They look awful but they are sooo good.

I would recommend either ham or chicken, either will complement the green beans nicely and can be done without being overwhelming. Rolls and another vegetable are also a good idea--but consider something colorful--mashed sweet potatoes or turnips or something, can be just as yummy with lots of butter.

I recommend www.recipezaar.com for good main dish ideas.

Turkey meatloaf, roast chicken. Don't make anything very "saucy" as a main dish or your meal will be more like a casserole in itself.

a great crilled chicken breast and stuffing. use stove top savory herb but instead of water in the directions use a can of chicken broth, and a stick of butter. fry some bacon to add to your green bean casserole ans if you drain it its not too unhealthy but adds great flavor
