In the north it is mostly cream sauce. By some Progresso seasoned bread crumbs garlic & herb Take boneless chicken breast beat between waxpaper until 1/2 in Then bread both sides with crumbs fry at med 4 min. a side, use 1/2 butter 1/2 lite olive oil about 1 tea sp.each. chop some sweet onion and tomatos, no seeds, about two min before second side is done put slice of Havairty cheese to melt on top, now top that with room temp. onion tomato mix,drained. P.S. careful second side does not get to dark you may need to turn down the heat

This is a great fresh, light pasta to make when zucchini are in season, or are flourishing in your garden. I do use olive oil to fry them as it lends a nice flavor, but it does not make the dish greasy at all.
: Serves 4

The simplicity of the dish allows the flavors of the zucchini and the cheese to shine through. If you are lucky enough to have fresh zucchini from your garden, add some chopped colorful zucchini flowers to this dish for a burst of color.
1 Pound Dried Bow Tie Pasta
4-5 Small to Medium Zucchini
Bunch Of Fresh, Washed, Chopped Parsley
3/4 Cup Fresh Grated Parmesan Cheese
1/4 Cup Olive Oil
2 Large garlic Cloves, Minced
Fresh Ground Pepper
Dash of Salt
Dash of Red Pepper Flakes (Optional)
Slice the zucchini into coins, and fry in the olive oil until golden brown. Drain on paper towels. Add the garlic and remove before it browns. Cook the pasta until al dente, reserving a small cup of the pasta water before draining. Drain the pasta, and add the zucchini to the hot pasta with a little of the water. Mix thoroughly over medium heat, adding the cracked black pepper and red pepper flakes if you are using them. Remove from the heat and add the fresh, chopped parsley and half the cheese. Mix well and serve, offering the additional cheese for on top of the pasta.

Im sorry, but I think that you should dump him!
But if you dont want to then its simple, Buy some pesto sauce! Goes with any pasta dish, add a little butter and water, so that its a little creamier in consistency. Make sure to season well.
To make your own;
Fresh basil leaves, toasted pinenuts, garlic, parmesan(grated) and olive oil , salt and pepper. Sorry I dont know the amount, Im a chef so I never actually weigh anything.

Do a search for Mario Battale and see what you can find. he does a show on the Food Network.

Many , many , many Italian recipes for cooking which do not use tomatoes.
On the other hand many, many man,y good men would love a woman who would cook for him and worry over him without childish threats over cooking.
Buy a cookbook which specializes in Italian dishes and a newspaper to check want ads for new boyfriend. Go home read them both, call him and tell him you learned new recipes and have new man to enjoy them.
If he wants to play like that tell him goodbye.

how can he love Italian but hate tomato, maybe you can chop so fine he won't know the difference, try tricking him. Or maybe you should let him leave, if he wants to leave over a darn tomato, you don't need him anyway.

So cook him Northern Italian meals. Make a spectacular risotto and then tell him it's your last meal together. Sex should never be used as a bargaining chip. and neither should good food .

Ok, try red food coloring. Maybe he'll like that better. Or red icing. If all else fails, she him the door. That way you can use as many tomatoes as you want.

Feed him pasta carbonara, if you make it right he will kiss your feet... also... just for kicks make a lasagna with white sauce... good for kisses too. P.S. If he'll leave you for the lack of a good recipe, maybe another man might work out better for you... been married 17 years, if they love you they love your cooking even if they don't, if they know whats good for them.
