Meet them in a puclic place. Preferably in the middle of the day in a well lit and populated area where people will see you and you can easily signal for help.
Keep your cell phone handy and if your life is threatened, give up the car as those can be replaced and your life cannot.
Get in the car before handing over the keys and make sure the guy is actually intrested in buying.
If your afraid you may want to bring along a friend or a relative as a possible witness to anything or just for added protection.
Good luck.

All the above tips are good, plus:

-Ask for the prospective buyer's driver license and insurance info before they can drive the car. This covers you from a safety standpoint and gives you viutal info if the car is stolen/damaged during the test drive.

Don't go alone, go with a friend, or a relative, preferably male. Ask for the driver license of the prospective buyer and keep it until the test is over.
