Here's a couple:
Two-For-One Noodles
Serving: 8
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
4 cups (16 ounces) penne
2 tablespoons olive oil
1 small onion (for ½ cup diced)
3 slices bacon (turkey, regular, or low-sodium)
1 tablespoon fresh parsley leaves (optional)
1 large container (15 ounces) reduced-fat ricotta cheese
¼ cup already-grated Parmesan cheese, plus additional for serving
½ teaspoon dried basil (see note)
3 tablespoons hot water from the pasta pot
Salt and black pepper to taste
1. Place the penne in 3 quarts of already-boiling unsalted water and cook until tender, 11 to 13 minutes.
2. Meanwhile, heat the oil in an 8-inch or larger nonstick skillet, over low heat. Peel and dice the onion and add it to the skillet. Coarsely chop the bacon, add it to the skillet and cook until the onion is tender and the bacon is not quite crisp, about 3 minutes. While the onion and bacon cook, chop the parsley (if using).
3. Using a slotted spoon, remove the bacon and onion to a 3-quart or larger serving bowl. To the bowl add the ricotta, the ¼ cup Parmesan cheese, parsley, basil, and hot cooking water from the pasta pot. Stir well and set aside.
4. Drain the penne well and pour half immediately into the bowl with the ricotta mixture. Stir well to mix, then add the remaining penne and stir well again. Season with salt and pepper and serve, passing extra Parmesan at the table.
Notes:
1. Serves 4 with leftovers to make Mock Spinach and Ricotta Lasagna.
2. If you have fresh basil substitute 1 tablespoon chopped for the dried. Chop it when you chop the parsley, if using, in step 2.

Mock Spinach and Ricotta Lasagna
This lasagna is a family favorite and is so easy! Nobody will know that it took you 20 minutes to make.
Serving: 4
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 8 minutes
1 package (10 ounces) frozen chopped spinach
4 cups leftover Two-for One Noodles
1 jar (26 ounces) spaghetti sauce
1 cup (4 ounces) already-shredded mozzarella cheese
1 The oven should be already heated to 425 degrees.
2. Place the block of frozen spinach in a microwave-safe dish, cover, and microwave on high for 5 minutes to defrost.
3. Meanwhile, place the Two-for-One Noodles in a 13 x 9-inch glass baking dish, separating any that may be stuck together. When the spinach is defrosted, drain well and scatter over the noodles. Top with the spaghetti sauce and sprinkle with the cheese.
4. Bake until bubbly hot, 12 minutes. Serve at once.

Tuna casserole. If you have some cans of tuna just toss it together with noodles, some cream, parmesan cheese, and garlic and cover the whole thing with some bread crumbs. Only needs to cook for about 20 minutes.
Any pasta dish is easy, simple, ready fast and needs no meat.
Also, I know the supermarket has some dishes called Viola! Meals, in the freezer section. I usually keep some of those on hand, and they work really well in a pinch. Everything you need is in the one bag, and they are ready in about 15 minutes. Tasty too.

Boil some water and cook instant ramen noodles. Leave out the seasoning packet. If you have a little meat, like bacon or sausage, chop it fine and saute in a skillet for a couple minutes. Chop up whatever vegetables you have and add to the pan and cook for a couple of minutes. Sprinkle in about 1/2 of the seasoning pack and add the noodles and about 1/4 cup of the water. Toss for a couple minutes and serve. Have some soy sauce or hot sauce on the side. If you don't have any meat, just leave it out.

Yes, mac & cheese with smoked sausage in it is so good. But for a non-cooked meal I cut an apple in wedges and put a dollip of crunchy peanut butter on each wedge. After this, a hot sweet bowl of flavored instant oatmeal with a dab of butter and a swirl of milk in it tops off your healthy apple. Microwaving the oatmeal takes 1 1/2 minutes. Something crunchy and then something smooth, hot, & sweet makes a great meal.

2 things that I like which are very easy.
1) Make some pasta (spaghetti, or macaroni)- takes 10 minutes.
Then stir in lots of pesto0 takes 2 minutes.
Add some grated cheese if you like- 2 minutes!
and eat it! If you use nice pesto, wholewheat pasta, and nice cheese, this makes a nice quick snack.
2) The other thing I like to to make a toasted sandwhich in the george forman griller with three slices of bread- a triple decker.
It takes about 4 mins to toast.
It isn't too filling ( like 2 sandwhiches). But it doesn't leave you hungry like 1.

A bag of frozen four cheese tortellini and a bag of Birds Eye frozen stir fried vegies, cooked together (about five minutes) and drain. Heat about half a jar of Alfredo sauce & add to pasta & vegies. A loaf of crusty french bread from the grocery bakery & a bag salad w/cherry tomatoes & dressing.

Eggs and toast
The egg whites supply excellently digested protein, the yolks have some fat ( which everyone needs a little of - you can always deyoke most of the eggs ) and the toast supplies necessary carbohydrates ( real whole wheat is better than white ).
Not only is it quick, it's cheap!!! Use a little olive oil to cook in to boost the good cholesterol.

You could do ANYTHING meatless, for example pasta and or salad. Even making a carbannera (pasta with eggs and a little ham or bacon) is good. You could take advantage of the fact that chicken or red meat (London broil for example) is frozen because it cuts well. Use the chicken by poaching it in your fave spag. sauce for pasta...slice the red meat extra thin and make fajitas. Both are super quick.

Add ham and eggs(cooked of course) then put some beans on the plate (if you want) Put some White cheese on the stove(not 4 too long) Then maybe a smoothie for dessert
