My husband and I had a handfasting where we ritually "tied the knot". We made pledges to each other in the presence of our deities and a legally ordained priestess.

The options for a handfasting are limitless. People include the things that are important to them. We were handfasted in the autumn at the peak of the leaves changing (In my state that is in mid-October). It was an outdoor wedding (in an open shelter) and we had a fire in the fireplace during the ceremony. Now every year our anniversary is when the leaves are in their peak color. There is never a shortage of beautiful places to go and see on our anniversary and the changing of the leaves reminds us that we have spent another happy year together.

If you do not belong to a coven, look for your local pagan groups, meetups.com lists all kinds of groups, through them u can locate an ordained Priest or Priestess that has the legal right to handfast you and your partner. But like most religions can't expect them to just do it, you will probably be required to fulfill some sort of counseling or coaching before hand.
The ceremony can be a simple or extravagant as you would like, there are many different aspects you can incorporate. This is something you would discuss with he person you find to officiate. Another option is to marry via justice of the piece and then hold a separate ceremony with a trusted "elder" (someone further then yourselves) as the officiant.

I've never been invited to a Wiccan wedding ... but all of the other weddings I've attended have varied significantly. I'd guess what they decide to do depends a great deal on the desires of the participants.

Handfastenings is the common tradition, but there is no rule that Wiccans have to observe that tradition.

There is also a ceremony called "jumping the broom" where a broom is placed on the floor and the couple jump together across it. This may not be Wicca per se, I don't recall, but it is pagan.
