Use a different kind of cheese--provolone, brie, gouda--something to give it a little kick. Use a differenet kind of bread as well--sourdough, rye etc. Add tomato--that is always nice. Be creative!

I spread on (very lightly) a little dill vegetable dip on one side, and it gives it a little kick. I've also used pepper jack and colby cheese mixing two different flavors of cheese is good too. Use thicker bread sometimes. I've also dipped both pieces of bread in an egg batter, and put cheese between the slices, it was french toasted grilled cheese sandwich. (without the syrup of course)

Add a slice of ham, or some crisp bacon.

If you're a vegetarian, add tomato, onion, and/or green pepper. Sprinkle on a little chili powder, or your favorite herb. My hubby drains black beans and puts them on his sandwich with a few sprouts. Get creative, use whatever sounds good to you!

Play around with whatever salad dressings you like. Try various mustards, mayo ...

Try a different kind of cheese. Try mozzarella with pizza sauce. Pepper jack cheese with salsa.

Experiment with different kinds of bread ... rye, pumpernickle, honey wheat, English muffins, bagels ...

Add tuna, leftover chicken or hamburger ... anything that sounds good!

I'll stick with the bacon!

Put Frank's hot sauce in the cheese.

Or do what Rachael Ray does and soak it in EVOO and take all the bread out of your sandwich and leave the crust.

Today for lunch I made a mix or tomatoes, green chilies, mustard, pepper and mayonnaise and slapped it on the bread along with the usual cheese. The kids LOVED it!

In the UK we put Worcester Sauce on top of the cheese before we grill it. Dont know if you have that in US

Thin onions and a side of pickle. Maybe try different bread and use a garlic / herb butter
