Coffee House Coffee Cake
A delicious coffee cake from the famed espresso chain.
Topping
1 cup all-purpose flour
1 cup packed light brown sugar
1/2 cup butter, softened
1 teaspoon cinnamon
1/2 cup chopped pecans
Cake
1 cup butter, softened
3/4 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup milk
12 servings
1. Preheat oven to 325°.
2. Make topping by combining 1 cup flour with brown sugar, 1/2 cup softened butter and 1 teaspoon cinnamon in a bowl.
3. Mixture should have the consistency of moist sand.
4. Add 1/2 cup chopped pecans.
5. In a large bowl, cream together 1 cup butter, 3/4 cup light brown sugar and 1/2 cup granulated sugar with an electric mixer until smooth and fluffy.
6. Add eggs and vanilla and mix well.
7. In a separate bowl combine flour, baking powder and salt.
8. Add this dry mixture to the moist ingredients a little at a time.
9. Add milk and mix well.
10. Pour the batter into a 9 x 13 baking pan that has been buttered and dusted with a light coating of flour.
11. Sprinkle the crumb topping over the batter.
12. Be sure the topping completely covers the batter.
13. Bake 50 minutes or until the edges just begin to brown. Cool.

Being that you are mom of the bride, and you will have your hands full, I suggest that you cheat a little!!;-) Use a cake mix, they taste just a good if not better than scratch. Who will know unless you tell them! It will be easier on you all the way around. If you want to kick it up, go to you loal book store and get a copy of the cake doctor!
It is the best book, you use cake mixes, and add to them to make really good cakes. And nobody know that it was not from scratch.

I have the perfect recipe, which is totally delicious (it's my favorite, and I have very sensitive taste buds), and there is NO flour used in it (which means even people with a gluten problem can eat it).
It is a family recipe and I certainly will not put it on the web.
It's an Austrian cake by the name Kaffee Creme Torte.

Topping:

1/4 cup butter, room temperature
1 teaspoon cinnamon

1 1/2 cups sifted all-purpose flour (sift before measuring)
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
3/4 cup sugar
1/3 cup melted butter
1/2 cup milk
1 teaspoon vanilla extract
PREPARATION:
Topping. In small mixing bowl, combine topping ingredients. Blend with fork until crumbly. Set aside.
Sift 1 1/2 cups sifted flour with baking powder and salt into a bowl. In a medium bowl, beat together beaten egg and 3/4 cup sugar and 1/3 cup melted butter.
Add milk and vanilla. Stir in flour mixture and mix well.
Pour batter into a greased and floured 8-inch square or 9-inch layer-cake pan. Sprinkle topping crumb mixture evenly over batter. Bake at 375° for 25 to 30 minutes, or until cake tests done. Partially cool in pan on wire rack. Cut coffee cake into squares while still warm.
Heres another one-with sour cream:
2 cups flour, sift before measuring
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup butter, room temperature
1 cup sugar
1 egg, lightly beaten
1 teaspoon vanilla
8 ounces sour cream (1 cup)

1/4 cup flour
3/4 cup brown sugar, firmly packed
1/4 teaspoon salt
1/2 cup chopped pecans
1/4 cup butter, room temperature
PREPARATION:
Into a medium bowl, sift together flour, baking soda and baking powder.
In another mixing bowl cream together butter with sugar until fluffy and light; add egg and vanilla and mix well. Add half of the dry ingredients, mixing just until flour is blended.
Blend in sour cream then stir in remaining dry ingredients.
Spread half of batter lightly into a greased and floured 10" tube pan. Sprinkle half of Topping and spread with remaining batter. Sprinkle with remaining Topping. Bake at 350 for 40 to 45 minutes.
Sour Cream Coffee Cake Topping: Mix together flour, sugar, salt and chopped pecans. Add butter in small pieces. Work butter in with hands until mixture is crumbly.
