I normally buy mine in a jar but would like to make my own.

Please don't do Dee's recipe - nothing needs a teaspoonful of black pepper - and the ingredient list is so long you could die shopping!
Essentials: minced or ground beef, tomatoes, mushroms, onion, garlic, bay leaf, oregano, red wine, olive oil, tsp sugar, salt & pepper
Possibles: bacon or pancetta, red pepper, thyme,
If you use fresh tomatoes you need to skin and deseed them - or you can use chopped tinned tomatoes. You can buy these with herbs but I prefer to add my own herbs to taste.
Method: Heat heavy base frying pan, add olive oil and finely chopped onion and garlic - soften without browning, Remove to large pan. Reheat frying pan, add bacon or pancetta, then beef. Turn until browned then add to other ingredients in large pan, add all the other ingredients. Bring to boil and simmer for at least 30 minutes.
This is better if you leave it to cool down for the flavours to mingle and heat up only as much as you need for the meal - it freezes well in portion size.

Some years ago at a cooking contest in Bolonga the winnings recipe was as follows.

500g minced beef
1 teaspoon ground ginger
1 teaspoon ground Cinnamon
1 large onion finely diced
3 cloves of garlic chopped and crushed
170 grams of tomato paste (double concentrate)
1 teaspoon mixed herbs
1 chicken stock cube
3 tablespoons olive oil

Method.

Heat the oil in a saucepan, fry the onion and garlic till just brown.
Ad the meat, ginger, Cinnamon, herbs and stock cube, stir till the meat has browned.

Add the tomato paste (puree). fill the puree tin with water and add to the pot, do this twice, the pate is double concentrate.

Bring to the boil , lower the heat and simmer covered, for as long as you can.

The flavour intensifies the longer you cook it.

Just before you serve the pasta add a few torn basil leaves and remove from the heat.

Serve with pasta dust with parmesan cheese. ENJOY

1 Stalk celery grated
2 tablespoon Tomato paste
1 pound Chopped beef
1 28 ounce Can tomato puree
1/2 pound Chopped pork or sausage meat
1 28 ounce Can Italian tomatoes
4 tablespoon Olive oil
crushed by hand
1 Onion chopped
2 cup Water
2 Cloves garlic crushed
Salt and pepper to taste
1 Carrot grated

In a large pot lightly brown garlic in olive oil and discard. Add onion,
celery and carrot and saute until translucent. Add meat and lightly brown
stirring often. Add tomato paste and simmer 1 min. Add tomatoes, tomato puree
and water and simmer 1 1/2 to 2 hours stirring often. Salt and pepper to
taste. Serve over cooked hot pasta or rice. *option-instead of 2 cups water,
you may add 1 cup water and 1 cup red wine (dry)

Yar get some steak mince, heat up large pan, put in butter and olive oil and diced onions possibly some chilli and garlic (add some red too) option of caramelising with brown sugar- just add a few pinches and wait for it to brown, stirring occasionally with a brown wooden spoon. Thyme- add somma that and some mixed herbs
tomato puree
tinned tomatoes
sundried as well, really brings the flavour out
red wine (a few glasses)

It looks like you've got a couple of lovely ones here, but if you're after something a bit more simple with mince and tinned tomatoes (great for if you don't have much left in the cupboard!) then email me and I'll send you full instructions. It's actually a really beautiful sauce and doesn't need many ingredients either.

1lb of chopped plum tomatoes,
stew down in 275 fl oz water for 1 hour (simmer)

Separately steep 2 onions and add 4 cloves of garlic!

then add about 25 medium sized chopped fresh oregano leaves... add some finely chopped basil..(20 leaves)

add salt and pepper not too much just a touch! pepper to taste

Add about half teaspoon of sugar then add the two sauces together, then simmer... add a half glass of your fave red wine!

If you add the mixture slowly to your mince beef whilst browning, your meat will have a wonderful taste!

Spaghetti Bolognese Sauce (Beef and Italian Sausage)
I've been working on this recipe for years--tweaking and fussing, and I believe it is about ready. My family and friends love it. I also use it as meat sauce filling for lasagna.
1 lb ground beef
1 lb bulk Italian sausages
3 (8 ounce) cans tomato sauce
2 (8 ounce) cans tomato paste
1 (14 ounce) can diced tomatoes (drained)
1 1/2 cups onions (diced)
1 cup bell peppers (diced)
1 cup mushrooms (sliced)
1 cup red wine
3 garlic cloves (minced)
2 tablespoons olive oil
1-2 tablespoon sugar
3 teaspoons basil
1 teaspoon black pepper
1 teaspoon marjoram (dried)
1 teaspoon thyme
1 teaspoon salt
1 teaspoon paprika
2 tablespoons mozzarella cheese (grated)
2 tablespoons parmesan cheese (grated)
1 teaspoon cornstarch
1 tablespoon water
6-8 servings

1. Brown ground beef, season to taste with salt and pepper, drain and set aside.
2. Cut bulk sausage up into meatball size pieces, brown, drain, and set aside. I use Thomasville Hot.
3. Sauté garlic, onion, and bell pepper in olive oil, just until the onions are translucent.
4. Add meat, tomato sauce, tomato paste, diced tomatoes, herbs and spices, mushrooms, sugar, and wine. I use fresh mushrooms, and a red burgandy for a deeper earthy flavor.
5. Simmer on medium low for at least one hour, stirring occasionally.
6. When ready to serve, mix corn starch with water and add to sauce, along with both cheeses to thicken.
7. When cheese is incorporated, and sauce has thickened, serve over your choice of pasta or use as a meat filling for lasagna.
