One pot salsa beef skillet
1 lb. lean ground beef
2 cups water
1 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
2 cups frozen corn
1/2 cup KRAFT Mexican Style Shredded Cheese
1 green onion, chopped
BROWN meat in skillet; drain. Return to skillet.
STIR in water, salsa and Macaroni. Bring to boil. Reduce heat to low; cover.
SIMMER 10 min. or until macaroni is tender, stirring twice. Add corn and Cheese Sauce; cook 2 min. or until heated through and blended. Ladle into bowls. Sprinkle with shredded cheese and green onion.
Easy Chicken Parmesan
4 frozen breaded chicken cutlets (about 1 lb.)
1 can (14-1/2 oz.) Italian-style diced tomatoes
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
2 cups rotini pasta, cooked, drained
PREHEAT oven to 375°F. Arrange chicken in single layer in 8-inch square baking dish.
SPREAD tomatoes over chicken. Sprinkle with cheese.
BAKE 25 min. or until chicken is heated through and cheese is melted. Serve over hot pasta.

Here’s my favorite recipe. This dish is microwaved, so it's done in a hurry.
-1 pound of boneless chicken breasts, cubed
-1 can of Cream of Chicken soup
-1 cup of salsa (I used mild)
-8 tortillas (6 inch)
-1 can of Cheddar Cheese soup
COOK chicken in nonstick skillet until browned and done, stirring often. Add chicken soup and 1/2 cup of salsa. Heat through. SPOON about 1/3 cup chicken mixture down the center of each tortilla. Roll up tortilla around filing and place seam-side down in a 2-quart microwave-safe baking dish.
MIX cheese soup and remaining salsa and pour over enchiladas. COVER and microwave on HIGH 5 min. or until hot. This serves 4, so if you need more just double this recipe.

If you have chicken breasts and a can of peaches, you're all set!
skinless, boneless chicken breast halves
1 cup brown sugar
4 fresh peaches - peeled, pitted and sliced (1 can of sliced peaches works just as well)
1/8 teaspoon ground ginger (to taste)
1/8 teaspoon ground cloves (to taste)
2 tablespoons fresh lemon juice (again, bottled works just as well)

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Place chicken in the prepared baking dish, and sprinkle with 1/2 cup of brown sugar. Place peach slices over chicken, then sprinkle with remaining 1/2 cup brown sugar, ginger, cloves, and lemon juice.
Bake for about 30 minutes in the preheated oven, basting often with juices, until chicken is cooked through and juices run clear.
For a nice sauce, take 1/2 tablespoon cornstarch and 1/2 cup cold water, mix thoroughly and add to the pan ... it will make a great sauce!
Serve over couscous, potatoes or pasta ... or skip the starch and add more veggies!

Russian Potato and Mushroom Croquettes recipe -
Cuisine: Russian
• Ingredients
7 potatoes, peeled
5 c water
1 onion, peeled and chopped
400 g mushrooms
1 tsp oil
1 tbsp water
1 salt and pepper, to taste
1 c flour
1 tbsp oil
• Method
Boil potatoes in water till tender. Drain and mash potatoes. In a separate pan, saute onions and mushrooms in oil and water over medium-high heat for three minutes. In a large bowl, mix mashed potatoes, sauteed onions and mushrooms, seasonings and flour together in a large bowl. Form croquettes. Heat oil in a large frying pan and fry croquettes over medium-high heat for 8 minutes on each side or until light brown.
Serve with sour cream and chopped greens.
B:) CABBAGE WITH TOMATOES~KAPUSTA Z POMIDORAMY recipe -
Cuisine: Ukrainian, Yield: Feeds 6 people, or 4 Ukrainian
• Ingredients
What you need: one small head green cabbage~one small onion, chopped~3 tablespoons plus 1 tablespoon butter~2 tablespoons water~one tablespoon white flour~one cupful cooked tomatoes, strained~2 tablespoons sour cream~salt and black pepper to taste

• Method
What you do: Shred the cabbage. Cook the onion in 3 tablespoons of butter in a large pot or skillet until tender but not browned. Add the cabbage and the water and let cook uncovered for about ten minutes until the cabbage is tender but still slightly crisp. In a small saucepan, heat the remaining tablespoon of butter, blend in the flour and stir in the tomatoes. Cook over low heat, stirring constantly until the sauce thickens. Stir in the sour cream, adding salt and black pepper to taste. Combine the sauce with the cabbage and simmer for a few minutes to blend the flavours.

It depends on what you have on hand, but I find that an easy and impressive thing to prepare is Spaghetti, and then take a loaf of bread, butter up two pieces for each person, and put garlic (powdered is fine) on it. Toast to perfection. Serve it up, and viola!
