you can leave out most of the stems...but use them for a vegetable broth (freeze them, plastic baggie). they tend to be tough.

I don't cook with it, but I really like it. By far the best Minestrone soup I've ever had was at the Santa Cruz Hotel. After they simmer the vegetables, they finish by throwing in some kale leaves (no stems) and simmer for a minute or two. It just brings everything together.

Just the leaves, stems are tough. I'm not a "greens" fan, but I have found that a little nutmeg added makes them fantastic!!
