Falafel is made from fava beans or chick peas or a combination of the two. The Egyptian variation uses exclusively fava beans, while other variations may only use chick peas. Unlike many other bean patties, in falafel the beans are not cooked prior to use. Instead they are soaked, possibly skinned, then ground with the addition of a small quantity of onion, spices, bicarbonate of soda and deep fried at a high temperature. Sesame seeds may be added to the balls before they are fried; this is particularly common when falafel is served as a dish in its own right rather than as a sandwich filling.
There is more than one way to stuff a pita with falafel. Hummus bi tahini, if used, is typically spread on the pita along with any chili sauce. Falafel and salads are then added. Salads range from a simple tomato-and-cucumber mix to pickled eggplants. In Syria and Lebanon, the typical filling is tahini or hummus (or both), tomato, lettuce, cabbage, pickles and lemon slices.
Once the entire pita has been packed, tahini (possibly with lemon) or yoghurt sauces may be added. .

Falafel is a delicious food made from ground chick peas. It is completely vegetarian (vegan even) and goes great with hummus (also made from chick peas but in a different way so it tastes very different). It can often be found at Greek or Middle Eastern restaurants. If you've never tried it, I highly reccomend it - it looks strange if you're not used to it, but it's really delicious.

they're deep-fried brown vegetarian patties or balls which sometimes have sesame sprinkled on them. their outer cover is crispy but they're soft and spongy on the inside. the inside is a blend of chick peas, fava beans, onions, bicarbonate of soda, garlic and sometimes parsley, which makes the filling look green, otherwise it's greyish-brown. falafel sandwiches are VERY popular in the Middle East. a falafel sandwich contains a few pieces of falafel, lettuce, tomato, pickles and either 'tahina' or 'taratoor', all wrapped in a warm pita or Lebanese bread. 'Tahina' is a thick sesame oil sauce and 'taratoor' is a mixture of tahina, lemon juice, garlic, salt and cold water. Falafel tastes better with the taratoor sauce.

Falafel is sold on street corners in every city and town in Israel. Some call it the "Israeli hamburger." Its popularity can be attributed in no small part to the Yemenite Jews who have brought a particularly tasty version onto the culinary scene. Students living on a meager budget consume full-portion falafels in whole pitas on the sidewalks as their noon "dinner."
1 lb. canned chick-peas (drained)
1 large onion, chopped
2 tbs. finely chopped parsley
1 egg
1 tsp. salt
1/2 to 1 cup breadcrumbs or fine bulgur (crushed wheat)
1 tsp. ground coriander or cumin
1 tsp. dried hot peppers
1 tsp. garlic powder
vegetable oil (for frying)
Combine chick-peas with onion. Add parsley, lightly beaten egg and spices. Mix in blender. Add breadcrumbs until mixture forms a small ball without sticking to your hands. Form chick-pea mixture into small balls about the size of a quarter (one inch in diameter). Flatten patties slightly and fry until golden brown on both sides. Drain falafel balls on paper towels. Serve individually with toothpicks as an hors d'oeuvre or as a sandwich filling with chopped tomato, cucumber, radish, lettuce, onion, hummus and/or tehina inside pita bread. Makes about 24 falafel balls.
