marinate the chicken in some of ur parent's favorite salad dressing; i.e. ceasar dressing; marinate it for about an hour or longer if u can; cook like normal and serve a salad with the same dressing....simple and yummy

chicken Parmesan is so good!if you already know how to make then OK, if you don't then here's a recipe
4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese
PREPARATION:
Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. In a skillet with a little olive oil over medium-high heat, brown on both sides until golden.

Set chicken in a baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly. Serve with spaghetti, garlic bread and a nice green salad.

Breaded Ranchero Chicken
Chicken breasts with a kick of ranch! Cut this recipe in 1/2 to feed a smaller group.
2 lbs boneless skinless chicken breasts
3/4 cup parmesan cheese
3/4 cup crushed corn flakes
1 envelope ranch dressing
1/2 cup melted butter or margarine
8 servings
1. In bowl, combine cereal, salad dressing mix and cheese.
2. Dip chicken into melted butter, then dip into above mixture.
3. Bake in a greased, 9x13 dish, uncovered at 350 degrees for about 45 minutes.

Green Chili Chicken:
1-2 cans minced green chili
I chopped onion
1 clove crushed or minced garlic
1 can Rotel Tomatoes (these are spicy so you might want to get the milder kind if you don't like spicy food.)
1 tsp crushed red chili flakes (if you like spicy food)
Cook on stove top (on med heat) for 1-2 hours or in a crock pot for 3-4 hours. Shread the chicken before serving. This is great over rice or wrapped up an a tortilla. Also serve with cheese, green onions, cilantro, fresh tomatoes and peppers. This is also great the next day for leftovers

Chicken, Salsa, Cheese Bake
Put frozen chicken breasts in bottom of casserole dish. Top with salsa of your choice. Bake at 375 for 30 minutes. Add a layer of cheese, bake an additional 15 minutes. When you add the cheese, put water on to boil and do Uncle Ben's boil in a bag rice.

Chicken Pasta
Boil water for pasta - any kind will work. Follow directions on box.
Thaw chicken breasts in microwave just enough to be able to cut through them. Cut them into 1/2" pieces, then saute them in olive oil until browned. Heat a jar of spaghetti sauce or make your own with some tomato sauce and seasonings, add cooked chicken. Put over pasta. Quick, easy and tasty.
OR
If you have bread, break it up and dry it in the oven. Use the food processor to make bread crumbs or just crunch it up with the back of a glass and make whatever you usually do with breadcrumbs.
OR
Chicken Fajitas
Thaw tenders in microwave, cut into long thin slices. Saute in a pan with julienned peppers and onions and season with cumin, salt and pepper. Warm up tortilla shells and you have Fajitas.

Make chicken Parmesan
1 can diced tomatoes
1/2 cup shredded mozz. cheese
2 cups cooked rotoni noodles - or spaghetti noodles
1 jar of pasta sauce
put the chicken in baking dish cover with sauce and tomatoes
Bake until chicken is done
Add cheese and a little more sauce
bake until melted.

A real simple recipe for onion soup. Chop two onions (Yellow or sweet onions work best) and 3-4 cloves of garlic. Saute' in a semi large pot with some olive oil (just enough to coat bottom of pan). Saute' onions until browned. Add 2-4 cups beef broth a splash of Balsamic vinegar, salt and pepper to taste. You can also add some red pepper for a little kick. Melt cheese on it (provolone is best) and serve with some bread. Total prep time 5 minutes, total cooking time approx 10 minutes. Serve with a salad. Enjoy...

I did not put this in any particular order
Chicken Parmesan
Boil spaghetti noodles until cooked
heat oil in sauce pan or deep fryer
clean and season chicken tenders
batter chicken and fry chicken
in a pyrex dish put your noodles on the bottom
place your fried chicken tenders on top neatly
(horizontally)
spread spaghetti sauce on top of chicken & noodles
i use the finely shredded kraft motzarella, parmesan cheese and place on top
pre-heat oven to 375
place inside for 5-10 minutes
you only want to melt the cheese and your done
i buy the 5 cheese texas toast and make a nice salad. Dinner is served

I put a little olive oil in a pan and cook the chicken thru. In a pot I boil some pasta (I like bowties or penne) and heat up some Alfredo sauce. You can heat in a microwave safe bowl or in a small saucepan. When everything is done (cut the chicken into bite-size chunks) combine and serve w/ a nice salad. Throw them into a ovenproof pan. [you could flour and brown them in a little oil first if you like] Mix a bottle of satay sauce, 2 heaped tablespoons crunchy peanut butter, a few cloves of crushed garlic and a 600 ml bottle of cream. Season with salt and cracked pepper. Pour over chicken, cover and bake for about an hour or until chicken cooked. serve with rice, noodles and or tossed salad. Yummy. Good Luck!

One of my favorites is to get those frozen boxes of vegetables of creamed spinach. Cook that according to the directions. Cook the chicken breasts in the oven for about 15 - 20 minutes, then top them with the creamed spinach and alfredo sauce and cook about 5-10 minutes more. Add some shredded cheese if you like. Very awesome Chicken Florentine. My kids even eat it.
Or bread the chicken with flour, then eggs and then bread crumbs. Bake and then top with spaghetti sauce and shredded cheese. Voila: Chicken Parmigiana! I hope that helps. Good luck!
