Any recipes for something italian that would go well with wine thats her favorite type of food?

I have a great lasagna recipe - and goulash, or chicken spaghetti - it has a white sauce. I can also make manacotti - stuffed shells - If you want a recipe for any of these - contact me.

I found this recipe and it sounds yummy!
Chicken Scarpariello

1 (2 1/2 to 3 Pound) Chicken Cut Into Pieces

1 Cup All-Purpose Flour

Salt & Pepper

1 Teaspoon Oregano

4 Tablespoons Olive Oil

3 Cloves Garlic, Peeled & Sliced

1/2 Cup Chopped Onions

1 Sprig Fresh Rosemary

1 Cup Chicken Broth

1/2 Cup White Wine

Juice From 1 Lemon

3 Tablespoons Unsalted, Softened Butter

1 Tablespoon Flour

1/4 Cup Chopped, Fresh Parsley


Preheat the oven to 400 degrees F. Mix together the flour and oregano, and season with salt and pepper. Rinse and dry the chicken pieces, and then dredge them lightly in the seaoned flour mixture. In a heavy, ovenproof skillet, large enough to hold all of the chicken pieces, heat the olive oil, and then brown the chicken well on all sides over medium heat. Be careful not to burn the oil by using too hot of heat. Once all of the pieces are well browned, remove them to a plate. Pour out the left over oil in the pan, leaving just a tablespoon or two with the browned bits at the bottom. Add the onion and cook until soft, and then add the garic. As soon as the garlic begins to sizzle, add the wine, and stir the browned bits at the bottom while you reduce the wine by half over medium high heat. Add the chicken broth and bring to a boil. Break up the rosemary into pieces, and add it to the sauce. Return the chicken pieces to the skillet, and spoon the sauce over top. Bake the chicken until done, about 20 minutes.

Remove the chicken to a warmed platter, and bring the remaining sauce to a boil. Add the lemon juice and season with salt and pepper. Mix the tablespoon of flour with 1 tablespoon of softened butter. Add the remaining butter to the sauce in the skillet, and mix well. Remove the rosemary pieces from the sauce. If the sauce is thin, stir in a little of the flour and butter mixture, wisking continuously to prevent lumps. Once the sauce has thickened, add the chopped parsley, and pour the sauce over the chicken on the platter. Serve immediately.

I suggest a nice putanesca. It is quick and easy but she'll think you slaved over it.
Now bear in mind every measurement is in true italian form (a pinch of this, a bit of that)
here is what you need:
5 or so med size plum tomatoes
garlic a clove or 2 to suite your taste (finly chopped or crushed)
black olives (a small handful again to suite your taste) (choped into rings)
1 or 2 anchovy fliets ( not 1 or 2 cans!!)
Olive oil
Cayanne pepper (just a small smidge)
pinch of salt
pinch of of red pepper flakes.
pinch of orgiano (best if fresh)
pinch of basil (again best if fresh)
Instructions:
Boil your tomatoes for a few mins until the skin gets a little wrinkly. Then run them under cold cold water and you should be able to peel the skin right off. Chop into sqaure chunks.
In a saute pan (big frying pan with high sides) put in enough olive oil to cover the bottom of the pan (about an 8th of an inch) toss in your crushed garlic and your anchovey felits (don't be scared they cook down until they are all disolved) saute for a few mins then toss in your tomatoes and the rest of the ingredients cook for about 5 to 10 mins. Make some angel hair (or what ever kind of pasta you prefer) take a few spoon fuls of oil from your pan toss with the pasta, serve the sause on top, which should resemble salsa.
SUPER EASY and super yummy, she'll be thanking you in many ways I'm sure...good luck and if all else fails keep her wine cup full :-)

If the wine is red, you should make a braciole (pronounced brashawl) which is top round meat sliced about 1/4 of an inch thick and inside is a mixture of bread crumbs, garlic, italian flat leaf parsley and pine nuts. What I suggest is to salt and pepper both side of the meat then, with the mixture that I have decribed, spread it on the meat, no too much, and then roll and secure with a toothpick. In a saute pan, chop one clove garlic and extra virgin olive oil and brown all sides of the meat....once brown remove any extra oil in the pan, and add another clove garlic and two cans of crushed tomatoes, chopped parsley and chopped basil...let the meat braise on the stove or in the oven which ever you prefer for about 35-45 minutes. Serve over your favorite pasta with sauce........You will love it!

How about tortellini? Or homemade lasange. Find some ready to cook lasange noodles. Get 3 cups of mozarella (shredded). 1 container of ricotta cheese, oregeno, parmasean cheese. Combine 1 egg, container of ricotta, 2 cups of mozarella, pinch of oregeno, and 1 cup of parmasean. Get Paul Newman's marianra sauce, it's better if it's two jars. Heat oven to 350 deg. Spread a little sauce on the bottom of a large baking dish. Place noodles side by side slightly overlapping. Spread cheese mixture on top, then spread more sauce over that. Now continue for about three layers and on top of the final layer spread remainder of sauce then sprinker the left over mozarella over the top. Put foil over and bake for about 60 minutes. It's good, I promise. Have fun!

First aww your so nice. Ok how about this
FETTUCINI ALFREDO SAUCE
6 tbsp. butter
1 1/2 c. whipping cream
3 to 4 c. fettucini noodles, cooked
1 c. shredded Parmesan cheese
Salt & pepper
Even my man can make this so it should be easy. Serve with white wine.

Garlic bread, a nice salad with a creamy (not vinegar-based) dressing, and a chicken breast broiled or grilled with lemon pepper, salt, and cardamon.
I bet her favorite type of food is something she doesn't have to cook. Best wishes for you both.
