Whenever they want to be fed, my cats just sit on me or rub on me and just generally respond much more enthusiastically to my petting/caresses? Whenever, I want to hold them, they run away or ignore me. When they're hungry they come to me and are very responsive to my every gesture.

I know it sounds silly. I know this is how they act, but my question is: how do they know that this behaviour pleases me and will get them food? Let's say, if they wouldn't have been petted/held before, so they wouldn't have been able to associate this with food, would they have known to act like this?

Oh, and could this be called hypocrisy? Lol.

I think it's because it's tried and true. They tried it once, saw how you responded and now continure. It's the same reason babies cry. They know if they wail their mother will come running.

Cats are reasonably intelligent animals and are quite capable of learning what behavior gets them what they want. Also note that they do not care if it pleases you they just want the food.

They are just conditioned...they know that they need to get you attention in order to eat. After they eat, they generally just want to be left alone as usual...cats aren't really known for being super affectionate.

cats are awesome pets.. they have quite an attitude.. and they kinda do what they want when they want. i love that about them. i've foudn that with male cats, especially when you get them as kittens, they are more likely to want to play with you. my cat ALWAYS wants attention. he gets a certain whiney meow when he wants to eat though. and he likes to meow and whine for ME to take him to his litter box. it makes me giggle. be patient. let your cats come to you. some cats just don't like to be approached. they will coem to you when you want to play. do you live in a noisy environment or have children around? sometimes that will affect a cat's desire to be aroudn... good luck, hope this helps. oh yeah.. try a toy w/ cat nip or some cat nip on its food.. that tends to make them fun. good luck

i think they just try to get your attention. my cat did that too. he comes around me purring for petting, etc when he wants food and then ignores me when he's satisfied. kinda like a man.
