Go to any food store, and buy a box of Golden Dipt Tempura batter mix. Follow direction's, but use either beer, or club soda, not water. When putting in hot grease, use tongs, not fingers. Hold onto the mushroom, with the tongs, until it starts to float, the n release it. Turn over, in about a minute, to brown the other side. To get your batter to stick, you need to dredge whatever you're going to fry in flour, it works sort of like a glue. Just place your mushrooms in a plastic bag with 1/4 cup of flour and shake liberally. When they're all evenly coated, shake the excess flour off (through a strainer works great), then you're ready to coat with batter and then breadcrumbs. Good Luck!

BEER BATTER (TEMPURA)
8-12 oz. your favorite beer (dark is best)
8-12 oz. flour
Salt to taste
Use equal measurements of beer and flour. Mix until smooth with wire whisk. Add salt to taste. Use batter to coat assorted vegetables as for tempura, as a terrific onion ring batter, sliced zucchini or whole mushrooms. Deep fry until golden brown. Drain on paper towels and serve hot with Tempura sauce for assorted sliced deep fried vegetables or with a ranch style dressing for zucchini and mushrooms.
TEMPURA SAUCE:
Purchased tempura sauce or soy sauce sweetened to taste and diluted with water to cut some of the salty taste. Serve warm for dipping.

I USE A EGG BATTERBUT I PUT BREAD CRUMBS ON LAST, YOU HAVE TO MAKE SURE THAT THE MUSHROOMS ARE AS DRY AS YOU CAN GET THEM WHEN YOU BATTER THEM, AND MAKE SURE YOUR GREASE IS HOT ENOUGHT...THAT PLAYS A BIG PART IN IT TOO

I find if you dredge things in flour first, it helps hold the batter on better....also, remember not to wash your mushrooms, just wipe them off with a damp paper or tea towel

Make a stickier batter...try more egg yolk....then start with egg then bread crumbs. You can try crushed corn flakes too...yummy.

make sure your grease is hot enough before you put them in to fry. Sometimes the longer they sit trying to cook, the softer the batter becomes and therefore starts to fall off.
