We love spicy food at our house. Really spicy:) Does anyone have a somewhat simple but spicy family favorite in their home? Preferably with chicken, but open to any that you really love! Thanks!

I know I can go to recipe places on the net, but I am looking for things that people have actually tried and liked...Dishes people make in their homes, family traditions etc..

I have a big family and manu of our recipes are made from scratch and in a hurry. When my husband deployed I went to stay at my Dad's and my grandmother, aunts, uncles and cousins decided to come over without notice... I wanted to have lunch ready and made this: (It was such a hit and it was ALL gone!!!) It was spicy as H*LL, just like we prefer but without the peppers; who knew!!!

Ingredients:

- Chicken cut into strips
- Onions, garlic and scallions, chopped
- Oil of choice
- White Rice
- Chopped tomatos
- Fresh Baby Spinach
- Salt to Taste
- LOTTS OF PEPPER!!! (The kind that goes with salt)
- Fresh cilantro to garnish

Directions:

-- Prepare rice according to directions on sack

-- Sautee the chopped veggies (onions, scallions, and garlic) lightly and set aside but keep the pan on the stove hot

-- In a large dish, VERY liberally (NOT Kidding) sprinkle as much pepper as you think you can take

-- Add the chicken to the hot pan (make sure there's still some oil so it won't burn or stick) and turn over quickly so the pepper gets seared on both sides. After a few minutes add the sauteed veggies and continue to cook until done. Add salt to taste as desired.

-- When the rice is ready, add a LARGE handful or two of the baby spinach... the heat of the cooked rice will cook them enough to not be slimy. Quickly stir the rice until the spinach is no longer crisp but moist enough to eat without crunchiness. Stir the chopped tomatoes last, so they don't become runny. They give the dish the right amount of color to make it look good.

Serve chicken over bed of rice and garnish with cilantro. Enjoy!!!

Pistachio Chicken (really quick and easy)

4 Boneless, Skinless Chicken Breasts
1/3 cup shelled pistachio nuts, finely ground
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon red pepper
1/4 teaspoon brown sugar
1 tablespoon olive oil

Preheat oven to 400 degrees F. Mix Nuts and spices in a blender on low to chop and mix. Put Nut mixture in a shallow dish or deep plate. Press chicken in nut mixture.

Heat oil in large nonstick skillet. Add chicken, and cook over medium-high heat until golden, 2 minutes per side. Transfer chicken in skillet to oven; bake 12 to 15 minutes, or until chicken is cooked through.

Chicken Enchiladas
1 package (10-12) flour tortillas
1 can cream of chicken soup
5-6 green onions, chopped
3 or 4 cooked chicken breasts, chopped or shredded
12 oz. sour cream
1 small can chopped green chilies
2 cups cheddar cheese

Mix the soup, onions, sour cream and green chilies. Spread a THIN layer of this on bottom of a greased 9x13 pan. On each tortilla spread 2 or 3 T. of sauce, some cheese, and some chicken. Roll up and place in pan. After all tortillas are in pan, spread the remaining sauce over the top, trying to cover all surfaces of the tortillas so they don't get crispy when they bake. Top with remaining cheese. Cover with foil and bake at 350 for 30 minutes or until bubbly.

Monterrey Chicken Fajitas
2 T. vegetable oil
1 lb. chicken breasts, cut into strips
1 green pepper, cut into strips
1 medium onion, sliced
1 can cream of mushroom soup
1/2 cup salsa
8 flour tortillas, warmed
1 cup monterrey jack cheese, shredded

Heat oil in skillet. Add chicken and cook until browned, stirring often. Add pepper and onion and cook until tender-crisp. Add soup and salsa and heat through. Put about 1/2 cup in each tortilla, top with cheese and eat!
I know it sounds weird with the cream of mushroom, but it is seriously good!

This one's not spicy, but it is my favorite!
Sour Cream and Dill Chicken
1 package chicken breasts
pepper to taste
1 can cream of mushroom
3/4 of an envelope of onion soup mix
1 cup sour cream
1 T. lemon juice
1 tsp. dried dill
1 4 oz. can sliced mushrooms
paprika
Place chicken in a single layer in 9x13 baking dish. Sprinkle with pepper. Combine soup, soup mix, sour cream, lemon juice, dill and mushrooms. Pour over chicken. Sprinkle with paprika. Bake at 350 for 1 hour. I like to serve this with Uncle Bens Long Grain and Wild Rice Mix!

I make curry chicken salad alot at our house. I use the hot madras curry powder, diced grilled chicken breasts and mayonnaise. That's it. For extra spiciness you can serve it on jalapeno cheese bread.

I also make King Ranch Casserole alot. Use two cans cream soups (I usually use one can cream of chicken and then one of the spicy mexican cream soups from Campbells), one can of Rotel tomatoes (get the hottest variety they have), diced grilled chicken and shredded cheese. Take a casserole dish, make a layer of tortilla chips on the bottom, then half of the chicken mixture, then another layer of chips and then the rest of the mixture. Top with more shredded cheese. Bake at 350 for about 30 minutes.
