the place (cru) that the grapes are grown. gran champagne is considered the best, petite champagne the second best, fine champagne is a blend of petite and gran. and there are other cru's that are not as common and lack quality. the bubbles in champagne can tell you alot about the quality.the fewer straight lines of bubbles the longer they will last. I say straight lines because if the bubbles seem to be coming from everywhere its probably had the secondary fermentation in a pressurized vat instead of the bottle. bad! of course you will always get what you pay for.

Different grapes. Technically, only wine made from grapes grown in the Champagne Region can be called Champagne--everything else is Sparkling Wine (I like this better than Champagne)

there is the gross dry kind and the even grosser drier kind
definitly the difference has to do with sweetness and dryness,
and also with the region and type of grape, that is why a lot of napa stuff is calling sparkling wine

I would say the most important factor is how dry or sweeet it tastes which would depend on where exactly the grapes were grown and when.
