I don't know why I don't use them much, because I usually find that I like them. Maybe I just need to try someone elses favorite lima bean recipe. I'd rather make a tried and true favorite recipe that someone is willing to share instead of getting one from a cookbook

This is my favorite!

Lima Bean & Pork Chop Casserole

4 loin pork chops, cut 3/4 inch thick
3/4 teaspoon of salt
1 teaspoon of dry mustard
1 teaspoon of sugar
Pepper
1 tablespoon of chopped onion
1/4 cup of water or liquid drained from beans
1/2 cup of tomato puree
1 can baby lima beans (1 lb. 4 oz.) drained

Brown chops on both sides in frying pan. Then remove chops from pan. Add 1/4 teaspoon salt, mustard, sugar, pepper, onion, water and puree to drippings and blend well. Add lima beans, stir until well coated, then put them in 4 individual (or 1 large casserole) and top with pork chops. Sprinkle chops with remaining salt and bake uncovered in a preheated oven, 350ºF. 1 hour 10 minutes.

I just made these the other day. I like it with corn bread.

Sort a 1 lb. bag dry Limas (the big ones), rinse
Put in soup pot with 6 cups water
ADD:
1 cut up onion
1 clove garlic
2 sliced celery
1 cut up bell pepper (optional)
3 slices raw bacon or a big ham hock (if using ham hock, remove and chop meat, returning to pot before serving)
salt/ pepper to taste
Bring to a boil, cover with lid, then lower heat to simmer for about 1 1/2 hrs.
eat!
