I have 4 children and breastfed them all. My youngest was like your son when she was an infant. She had few poopy diapers, not even one every day. My other 3 children pooped a lot when they were babies, several times a day and sometimes at every diaper change. I took her in when she was 3 days old since she had not had one poopy diaper since the hospital. The doctor checked her thoroughly and she was fine, but she was 10 days old before she pooped. I would check with your doctor for sure, but if he is nursing fine and does not seem to be in any distress or pain, he may just have a system that doesn't require frequent pooping. My youngest is now 9 and she still goes 1-3 days between poops. She is very active and eats an amazingly healthy diet. Her pediatrician says her body utilizes her food intact very efficiently and that is why she does not have bowel movements every day.

If he or she is gaining weight I wouldn't worry to much unless they are not, if there is alot of belly aches you need to call the doctor, or if the baby is fussy. But DEFINITELY mention it to your doctor the next visit.
