eggplant,squash,onions,bell peppers,jalepenos, are only a few that i could think of off the top of my head but you can also make fruit kebobs using peaches,pineapples,or even apples just be sure you put olive oil on them first so they dont stick if you put them on the grill.

My current fav is green pepper, onion and cherry tomatoes. Simple and yummy. Other than that, eggplant, zucchini, chillis, asparagus (great rubbed in a mix of lemon and olive oil), squash etc etc
We also wrap eggplant or vine leaves around goats cheese or feta or stuff large chillis with them - grill them first then peel, cut open stuff with cheese re-seal and put back on the grill for a few mins!

My favorite kabobs--I scrub potatoes and cut in large chunks, precook them until almost tender--put on skewer with sirloin tips and whole canned red beets, brush everything with melted butter and grill. You could also use fresh beets, but they would also need to be pre-cooked.

Ive used cherry tomatos. Some people use wedges of zucchini and squash.

For a tropical flare, especially with chicken and shrimp, try pineapple chunks.

I use green, yellow, and red peppers. Onions, mushrooms, cherry tomatoes. That's the best to me, but you can use other's.
