I use this stuff from Walkerswood products....it's an authentic Jamaican jerk marinade. The list of ingredients is scotch bonnet peppers, salt, pepper and something else I can't remember-very simple. If you like spicy food, give this stuff a try if you get a chance. It's gives great flavor to pork, chicken and makes an excellent tuna salad (just mix this and a little mayo together for the dressing). You can use it on red meat, but I'm not the biggest fan.

Marinate it in BEER. It tenderizes the meat and gives it a unique flavor. Marinate it overnight in the frig. Then barbecue on low if using a gas grill

If you want really juicy chicken, try brining it:
Brine Ingredients:

* 1 cup salt
* 1/2 cup light brown sugar
* 2 quarts apple juice
* 1/2 gallon water
* 2 onions, cut into large pieces
* 2 apples, cut into large pieces
* 10 peppercorns
* 2 bay leaves

I put a spice rub on mine...usually a mix of salt, pepper, garlic, and some cajun seasoning and then pour this really great vinegar based bbq sauce on top it and let it sit for a while or cook it right away...I bake it in the oven and I let it bake in the marinade...it makes it really tender and juicy.

I like either barbeque sauce or I also use a lot of salad dressings as marinade. Because they usually contain so much vinegar they keep chicken moist.
