chicken nachos
INGREDIENTS:
2 cloves garlic, crushed
6 green onions, sliced, white parts and tops separated
3 tablespoons canola oil
1 shredded, cooked, whole chicken breast
salt and pepper to taste
1 cup salsa
1/2 (12 ounce) package tortilla chips
1 (8 ounce) package shredded Cheddar/Monterey Jack cheese blend
1/2 large tomato, diced

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a 12 inch skillet over medium heat, cook and stir the garlic and white parts of the green onions in canola oil until tender. Mix in shredded chicken, salt and pepper. Toss until well coated with oil. Stir in the salsa.
Arrange tortilla chips on a large baking sheet. Spoon the chicken mixture over tortilla chips. Top with Cheddar/Monterey Jack cheese blend and tomato. Bake in the preheated oven 10 minutes, or until cheese has melted. Remove from heat and sprinkle with green onion tops before serving.

Yes indeed. I use the canned chicken (tyson or hormel) because it's just so easy, but you may need 2 or more cans depending on how many you are cooking for. If you want regular chicken that's fine too.
Since I use canned, this recipe is for canned.
Cut onion (however much you want to use, and also green peppers if you like those). Put them in a skillet.
Add the chicken to the skillet, with the liquid from the can & let it cook until onions and peppers are close to done.
Add 1/2 a package of taco seasoning and add some water. Cook until everything is done and liquid is mostly absorbed.
Be melting your cheese in the microwave (I love the cheese whiz kind that's hot, comes with a purple lid).
Put your nachos on a plate or platter, put the chicken on the nachos, pour the cheese over top, add sour cream, and Tostitos Restaurant Style Salsa, sour cream, jalepeno's...whatever you want. You don't have to put them in the oven. mmm, yummy, might make this for dinner now. hehehe

A few years ago I visited Virgil 's Restaurant in Manhattan, I ordered the nachos w/ chicken. The chicken they use was similar to pulled pork. What they did was stewed a chicken in a spicy Barbecue sauce and then puled it off the bone. It was a shredded Chicken. You can also use ground chicken and a package of taco seasoning, follow the directions on the pack. Take your chips place them on a heat resistant plate or serving tray, if you are using fresh corn tortillas, cut them and fry them first. There are many good chips on the market. top with hot chicken mix and then shredded cheese, usually Monary jack and cheddar mixed. Melt the cheese in oven. Just when you are ready to serve, top with guacamole, sour cream, sliced jalapenos, sliced olives and salsa, be creative and decorate the top for a nice presentation. Pick and choose your favorite toppings , remember hot food hot cold food cold.

yes! go the french's fajita package mis. follow the directions then take on the boarder chips add small amount of shredded monterrey jack cheese then the chicken fajita mixture (add a slice of jalapeno pepper if you wish) then more shredded monterrey jack cheese. place in the microwave for about 20 seconds or until the cheese melts.
top with sour cream. so good!!!!!!!!!!!!!!!!

Anyone that tried and liked chicken nachos would not be on my list of people I will speak to. What a stupid thing to eat.
