my family loves this one, and you can adjust the spiciness...
1 large can whole tomatoes
1 regular can of mexican stewed tomatoes
1/3 bunch of chopped cilantro
4 green onions, chopped
1/2 white onion, chopped
1/4 teaspoon cumin
2 teaspoons chopped garlic
1/4 teaspoon chipotle pepper powder
1 teaspoon salt
1 teaspoon pepper
1 jalapeno or habenero pepper, chopped
1 tablespoon or so of texas pete or franks red hot, pretty much to taste...
just put it all in a food processor and blend... best fresh, not refridgerated!

Really great and easy recipe-
1 lb. pork sausage browned and drained- I use the hot kind, but any flavor you like will work
1 can Rotel drained thoroughly- again, I use the extra hot kind but any will work
16 oz. Cream Cheese softened.
Combine the browned sausage, drained Rotel and softened cream cheese in a small crock pot and set to med. Heat until warm and then set to low. You will need to stir occasionally to prevent scorching. Great dip for Tortilla chips.
***If it is not hot enough for you, you can add crushed red pepper flakes, additional drained peppers, etc.
