Crockpot Barbecued Beef

2 lb. Chuck roast, boneless & trimmed of visible fat
salt & pepper to taste
1 1/2 c. ketchup
1/8 c. honey
1/4 c. balsamic vinegar
2 T. Dijon mustard
1/4 c. barbecue sauce
2 T. Worcestershire sauce
1 t. garlic powder

In a crock pot, place chuck roast. Salt & pepper it to your personal taste. In a large bowl, mix the rest of the ingredients until well blended. Pour on top of the roast, cover & cook on low for 8-10 hours. Remove roast from the crock pot & shred meat with a fork. Return meat to crock pot, stirring well to coat evenly with the sauce. Cook for another hour & serve.

Serves 6

I serve this on buns w/ coleslaw, potato chips & fruit salad. :O)

Basically, you just cook off the meat in a little liquid until the meat is tender. You should season the liquid to season the meat based on your taste, but don't over season the water as you will use it later. Take it out and let it cool.Strain the liquid. Pull the meat to the thickness you want, then use the liquid as a base for a sauce. You can reduce it and add molasses and ketchup (a cheat) to make a bbq sauce . Add other flavors depending on what you want it to taste like, then mix it with the meat or pour it over the sandwich.

Or instead of making a sauce, you can buy one you like and toss the liquid.

umm... i've never done sandwiches with this but I stuff this into tortillas and my family loves it...

I buy a pork tenderloin and sprinkle cumin, salt, pepper, & red pepper. Then I put in two or three cans of stewed mexican recipe tomatoes, one rough chopped onion, about a tablespoon of garlic and about 3/4 cup of water. I put it all in either a pan in the oven (covered except the last 30 minutes) for about 3 hours at around 350 degrees or i guess you could put it all in the crock pot until its falling apart.

this is really kinda mexican influenced, but its pretty good. hope it helps...

3 lb pork shoulder
1 16oz jar BBQ sauce
1 can Soda Pop (Cola)

Add all to crock pot - if frozen on high all day, if defrosted on low all day - the best BBQ pulled pork you will EVER have!

I serve it on hoagie rolls!
