My father would say that sometimes, usually when he was yelling at me. It always made me curious as to what it stood for, but that never seemed to be the best moment to ask.

Apparently no one knows for sure its origins or what it stands for, but the Christian abbreviation IHS (Iesus Hominum Salvator - Jesus, savior of men) seems to be a good guess. Greek monogram for Jesus, "IHS" or "IHC." You usualy see this on the to of crosses. The "H" is the capital form of the Greek letter ETA, but was reinterpreted as being the Latin letter "H" (that is, "aitch").
The IHS or IHC monogram is still used on religious articles as an emblem, and people unfamiliar with the Greek assumed that the "H" was a part of the name "Jesus" or of "Jesus Christ."

The H in Jesus H. Christ originated over time because people just thought it would be funny to give Him a middle name, somehow over time, H became that middle initial for His middle name. And that's how it started, just as a joke, truth.
