It is easier to digest vegetables because the stomach takes much longer to digest protein which is found a lot in meat. Of course your body needs the nutrients of vegetables and meat in a balance.

Vegetarian diet. But, that should include eggs. Our bodies were designed to eat much more fiber-rich foods than we currently eat. There is a theory out there that the refinement of grains, which make them too easy to eat and digest, and has stripped many essential nutrients from these foods including the fiber, have been a cause of cancer. But isn't everything a cause of cancer these days?
Anyway, some meat in the diet is good for us, meat contains essential fatty-acids and amino-acids, which we can obtain from eggs of course, and other vegetarian food sources, but might be easier to attain from meats today. Everything in moderation.

The fact is, you need a completely balanced diet. There is no problem with the human body digesting meat. You need it for amino acids. There is a little more waste (toxins if you will) associated with meat rather than vegetables, but if you drink the recommended amount of water, then it's no problem, it will flush right out of your system.
