I love to cook too, so I share with you some of my recipes.

First, I you want meat :

Veal with whisky cream
Serves 2 :
- 2 veal escalopes
- 1 onion
- 4 small mushrooms
- 125 grams crème fraiche
- whisky
- butter
- pepper, herbes de provence

Directions :

Chopped the onion and mushrooms.
Cut the veal up into thin strips

Melt the butter in a frying pan with pepper and herbes de provence.

Add the onion. When it starts to brown, add the veal strips.
Cook during 5-10 minutes, until the veal is browned.

Add the whisky in the pan and flamed it to burn the alcohol.

Add the mushrooms, and let cook another 5-10 minutes.

Remove the veal from the pan.

Add the crème fraiche in the pan and stir well to make a sauce.

Serve the veal cover with the sauce.

I served it with potatoes.

If you prefer Chicken, this is a recipe I like to do very much :

This recipe was a kind of accident the 1st time, but since then I cooked it many times, and everybody love it.

For 4 people:
4 chicken breast filets
4 tomatoes
1 onion
some salty almonds (about 70 grams I think, I use a small bag of almonds for the "aperitif")
some honey
cinnamon
pepper
(no salt, the almonds are very salty)
butter (not too much, about 25 grams)
olive oil

Put some olive oil in a casserole. When it's hot, put the onion sliced in small bits, the chicken breast filets and some pepper.

Remove the skin of the tomatoes, and cut them in small pieces.

When the onion and the chicken are golden, add the tomatoes and some butter.

Cover the casserole, and let it cook until the chicken is well cooked. The tomatoes must be in purée at that time.
(Stir from time to time so it won't burn)

Remove the chicken and put it on a plate.

Add the almonds (all but 10 you'll keep for the decoration).
Add some cinnamon.

Add the honey. I can't tell you how much you have to put in the casserole, it depends of what kind of honey you like. Try with one tablespoon full, stir well, ant taste it. Then decide if you want to put more or not. I usually put 2 tablespoon full of brown liquid honey.

Then, put back the chicken breast filets in the casserole and let them warm again during 5 minutes

Serve the chicken with the tomato sauce.
I usually serve some basmati rice with it.
You can use some almonds (the ones you didn't put in the sauce) to decorate to plates. You can put some on the rice for example.

A very easy recipe with egglpants :

Wash and cut an eggplant in small pieces.
Wash and cut some mushrooms.

In a pan, heat some olive oil and brown the eggplant in it with pepper and thyme.

Add some condensed tomato sauce and some hot water (it must cover the eggplant). Add the mushrooms. Let cook slowly until the water is evaporated.

In your plate put on slice of brown flour bread (toasted). On the bread, put some Italian ham. And on the ham, put the eggplant "ratatouille".

It's easy to cook, and very good to taste

----------------------------------------------------------------------

And least but not last, some pasta recipes !

Pasta with salmon :
Cut some smoked salmon in small pieces (I use one which is marinated with dill*, it's very good).
Make a sauce with cream, pepper, the salmon (and some dill if you use regular smoked salmon)
Cook the pasta (I use tagliatelles for this recipe).
When it's cook, add the cream and salmon sauce to the pasta. Stir well and serve while it's warm.

Pasta with chicken :
Grill some chicken breast filets in a pan. Remove them from the pan and cut them in small pieces.
Put some cream in the pan. Add some mushrooms, salt, pepper. Let it boil while stirring, then add the chicken.
Cook the pasta.
When it's cook, add the chicken sauce to the pasta. Stir well and serve while it's warm.

Bon appétit !!!!

Buy Cooks Illustrated magazine at the grocery store. It accepts no ads at all. It only comes out every 2 months and is affiliated with America's Test Kitchen which is shown on PBS. I have been cooking for over 30 years, and I found out about this magazine about a year ago. EVERY SINGLE RECIPE I HAVE TRIED HAS COME OUT PERFECTLY!!! You can visit their website @ www.cooksillustrated.com and they have some free recipes for you. I promise, it's the BEST thing you can do for youself. I have bought 8 of their cookbooks and gotten rid of most of my other ones. Hope this helps. I wish someone had told me about this years ago! Good luck and bon appetit!

Spinach Salad. Ingredients: Baby Spinach, Tripasta noodles, Bacon, Onion, Ranch Salad Dressing. Cook noodles until done, fry bacon until desired crispiness, remove stems from spinach, dice onion. Mix all in a bowl and chill. Add Ranch dressing before serving. You can also substitute chicken or sausage in place of bacon.
